Pork Tinola Recipe :
Ingredients
- 1 kilo pork ribs
- 2 thumb-sized ginger ( sliced )
- 1 medium onion ( sliced )
- 5 cloves garlic ( minced )
- Black pepper to taste
- Fish sauce to taste
- 1 piece pork broth cube
- 2 cups rice water ( or water )
- 1 large green papaya ( roughly chopped )
- 1 cup malunggay leaves
Steps:
- Heat oil in a pan. Saute ginger for a few seconds before adding the onions and garlic. Cook till aromatic. Add in the pork ribs, cook until it changes in color.
- Once browned add black pepper and fish sauce. Saute for a minute before pouring in water and mixing in a pork broth cube. Cover and simmer for 25 – 30 minutes or until the pork is tender.
- Use a fork to check if the pork is tender enough. Add in the papaya and give it a little stir. Cover for 5 more minutes or till the papaya is cooked. Place in malunggay leaves at simmer for a minute or till the leaves wilt.
- Serve hot !

This traditional FIlipino soup is made of chicken, green papaya or sayote, sili ( chili) leaves or green chillies, malunggay leaves, ginger, garlic, onions, fish sauce as it’s salty flavoring stewed all together till the chicken is cooked and the vegetables are tender. This dish is also almost always served with white rice on the side. In deeper historical ways, this dish has been cooked since Jose Rizal’s time in which it was even mentioned in Noli Me Tangere.
How to make this delicious soup? First heat up your aromatics, mainly ginger, onions and garlic. Then add in the cleaned pork ribs. Make sure to ask the butcher to remove the membrane which is the skin that holds all the ribs together. Removing this will help tenderize the meat better and faster. Cook the ribs till it changes into a lighter brown color. Add in some black pepper and fish sauce, and a bit more later once everything has simmered together. Pour in the water with a pork broth cube. Cover and let this simmer for a few minutes or till the pork ribs feel tender, and these are easy enough to be pierced with a fork. Mga Sangkap :
- 1 kilo pork ribs
- 2 daliri ng luya ( hiniwa )
- 1 sibuyas ( hiniwa )
- 5 butil ng bawang ( tinadtad )
- Pamint panlasa
- Patis panlasa
- 1 piraso pork broth cube
- 2 tasa ng tubig bigas ( o regular na tubig )
- 1 malaking berdeng papaya ( hiniwa ng malalaki )
- 1 tasa dahon ng malunggay
Paano Lutuin :
- Maginit ng mantika sa kawali. Lutuin ang luya ng ilang segundo bago haluan ng sibuyas at bawang. Ihalo ang pork ribs at lutuin hanggang mag iba ng kulay.
- Kapag nag kayumanggi na ang mga ito, haluan ng paminta at patis. Lutuin ng isang minuto bago buhusan ng tubig at lagyan ng pork broth cube. Takpan at pakuluin ng 25 – 30 minuto o hanggang lumambot ang pork ribs.
- Gamit ang tinidor, tusukin ang mga pork ribs para siguradong malambot na ang mga ito. Haluan ng papaya at takpan muli ng 5 minuto o hanggang maluto ang mga gulay. Ihalo ang mga malunggay at haluin hanggang lumanta ang mga ito.
