Ingredients
- 1 large potato
- 2 eggs
- ¼ cup grated parmesan
- ¼ cup shredded cheddar
- 2 tablespoons all purpose flour
- Pepper to taste
- 2 teaspoon salt
- Bunch of spring onion, chopped
- ¼ cup mayo
- Sriracha to taste
- Oil
Steps:
- Grate the skinless potato over a bowl with a towel lining it. After grating, use the towel to squeeze out the liquids. After, remove the liquids and place the potatoes back in the bowl.
- Mix in eggs, parmesan, cheddar, all purpose flour, pepper, salt, and spring onions. Set aside.
- In a hot pan with some oil, place in a portion of the potato mixture. Flatten by pressing it down with a spoon. Cook until crispy and golden on one side before flipping. Once both sides are golden and crisp, take it out.
