Chicken Menudo is a Filipino chicken delicacy, with the spanish influence. It is loaded with onion, carrot, potatoes, hot dogs and lot of spicy things to top up its taste. A very filling meal that’s healthy, savory, affordable and easy to make!
Ingredients
- 1 kilo boneless chicken ( chopped )
- 200 grams chicken liver
- 1 & ½ tablespoons soy sauce
- 1 & ½ tablespoons calamansi juice
- 5 cloves garlic ( minced )
- 1 large onion ( minced )
- 1 small carrot ( chopped )
- 2 small potatoes ( chopped )
- 5 pieces hot dogs ( chopped )
- 3 tablespoons tomato paste
- 2 tablespoons tomato sauce
- 1 piece chicken broth cube
- 3 – 5 pieces dried bay leaves
- 1 & ½ cup water
- Salt and pepper to taste
- 2 tablespoons sugar to taste
- ½ cup green and red bell pepper ( chopped )
- ¼ cup raisins
- Oil for sauteing
Steps:
- In a bowl, mix together chicken, 1 tablespoon soy sauce and 1 tablespoon calamansi juice. Marinade for 30 minutes. Then prepare the liver by mixing this with ½ tablespoon soy sauce and ½ tablespoon calamansi juice. Let this marinade for 30 minutes.
- In a pan, heat some oil and saute the potatoes and carrots until lightly browned. Then set aside. Then cook the hotdogs in the same pan until lightly browned before taking this out.
- In the same pan, saute liver until it changes in color. Take these out and set aside. Saute garlic, onion, and chicken with the marinade. Saute until these changes in color. Cook until the water from the chicken starts to come out.
- Mix in tomato paste before mixing in the tomato sauce, broth cube, bay leaves, and water. Cover and simmer for 10 – 15 minutes at medium heat.
- Add in the cooked liver, potatoes, carrots, hot dogs, and mix well. Simmer for 5 – 8 minutes. Give it a taste and add salt and pepper with some sugar to taste.
- Stir in some bell peppers and raisins. Cook for another 2 minutes or until the sauce thickens. Then serve with some rice.

“Menudo” or in Spanish “Small Bits” which is what the dish is, meats and vegetables chopped into slightly large and more often that not, bite sized pieces then turned into a stew. Similar to a chicken curry, but with Filipino flavors. “Menudo” or in some parts of the Philippines is called “Ginamay” is a traditional dish, one of the more popular Filipino recipes that is usually side by side with Afritada, Caldereta and Mechado all being tomato based stews that have specific additional ingredients that set these apart.
This actually originates from a Latin dish, and is extremely popular in Mexico where it is made with tripe and eaten to cure hangovers. The menudo many of us Filipinos know was Introduced by the Spanish to the Philippines in the 1500’s. Now, you can find these sold in many Carinderias ( Karinderyas ) or small street eateries as a budget friendly meal complete with rice and sometimes a side soup. Mga Sangkap :
- 1 kilo manok na walang buto ( hiniwa )
- 200 gramo atay ng manok
- 1 at ½ kutsarang soy sauce
- 1 at ½ kutsarang calamansi juice
- 5 butil ng awang ( tinadtad )
- 1 sibuyas ( tinadtad )
- 1 karot ( hiniwa )
- 2 patatas ( hiniwa )
- 5 pirasong hot dogs ( hiniwa )
- 3 kutsarang tomato paste
- 2 kutsarang tomato sauce
- 1 piraso chicken broth cube
- 3 – 5 piraso dahon ng laurel
- 1 at ½ tasa tubig
- Asin at paminta panlasa
- 2 kutsarang asukal panlasa
- ½ tasa berde at pula na kampanilyang paminta ( hiniwa )
- ¼ tasa pasas
- Mantika panluto
Paano Lutuin :
- Sa isang mangkok, haluin ang manok, 1 kutsarang soy sauce at 1 kutsarang calamansi. Imarinade ng 30 minuto. Ihanda ang mga atay, haluan ito ng ½ kutsarang soy sauce at ½ kutsarang calamansi juice. Imarinade ito ng 30 minuto.
- Sa kawali. Uminit ng mantika at lutuin ang mga patatas at karots hanggang mag kayumanggi ng konti. Itabi. Lutuin ang mga hotdogs at tanggalin pagkatapos.
- Sa parehong kawali, lutuin ang mga atay hanggang mag iba ng kulay. Tanggalin at itabi. Pagkatapos, lutuin ang bawang, sibuyas, at manok kasama ng marinade hanggang mgaiba ng kulay. O hanggang lumabas ang katas ng manok.
- Haluan ng tomato paste bago dagdagan ng tomato sauce, broth cube, dahon ng laurel, at tubig. Takpan at pakuluan ng 10 – 15 minuto sa katamtamang init.
- Haluan ng nilutong atay, patatas, karots, at hot dogs. Pakuluin ng 5 – 8 minuto. Tikman at lagyan ng asin, paminta, at asukal depende sa panlasa.
- Haluan ng mga kampanilyang paminta at pasas. Lutuin ng 2 minuto pa o hanggang kumapal ang sarsa. Ihanda kasama ng kanin.
