Baby Back Ribs

This Baby Back Ribs recipe needs no oven, no grill, or any machine, you’ll just need a pot and you’re ready to go! From simmering in salt and bay leaves, to simmering till tender with a sauce made of barbecue marinade, pineapple juice, soy sauce, tomato ketchup, garlic, brown sugar, Worcestershire sauce, black pepper, paprika, and some salt. Then seared then basted till you get a nice glossy and fabulously colored ribs.

Ingredients

  • 2 slabs of ribs

  • Salt

  • Bay leaves (for pre-boil)

  • Sauce
  • ½ cup barbeque marinade

  • 1 cup pineapple juice

  • ¼ cup soy sauce

  • ½ cup tomato ketchup

  • 2 bulbs garlic, finely minced

  • ⅓ cup brown sugar

  • 2 tablespoons worcestershire sauce

  • 1 teaspoon black pepper

  • 1 teaspoon paprika

  • 1 teaspoon salt

  • 1 cup water

  • Oil for cooking

  • Buttered vegetables
  • ¼ cup butter

  • 1 cup mixed vegetables

  • Salt and pepper to taste

Directions

  • Prepare the pork ribs; remove the membrane. Place the ribs in a pot filled with salt, bay leaves and water. Boil for 10 minutes, before discarding the water and wash the impurities off the ribs.
  • For the sauce; mix in barbecue marinade, pineapple juice, soy sauce, tomato ketchup, garlic, brown sugar, Worcestershire sauce, black pepper, paprika, and salt. Set aside.
  • In a pot with some oil, sear the ribs till light brown on both sides. Take the oil out and pour the sauce and water over the ribs. Cover and cook for 2 hours at low heat.
  • After 40 – 45 minutes, flip the ribs to cook evenly. Continue to simmer. Take the ribs out and keep the leftover marinade.
  • Place the ribs in a non-stick pan for ‘grilling’. Baste with the sauce, flipping and basting till you get a nice caramelized color.
  • For the buttered vegetables; melt butter then add in the mixed vegetables. Season with salt and pepper to taste. Cook for a few minutes. Serve as a side dish to the ribs.

For these tender and melt in your month stickily delicious pork ribs. All you need are a few ingredients. First are the ribs, taking off the membrane which is the part of the ribs that holds these together. This has to be taken off to make it easier to tenderize and for the meat to pull apart from the bone better. The ribs are then simmered in a water bath of salt and bay leaves which help remove any foul smells or taste the pork might have. Then strained and cleaned of the impurities. Set aside to cool for a bit.

Flipping the ribs halfway through to make sure everything cooks evenly. Take these out, keeping the leftover marinade for basting later on.   1. Ihanda ang mga ribs; tanggalin ang lamad. Ilugar ang mga ribs sa palayok na may asin, dahon ng laurel, at tubig. Pakuluan ng 10 minuto, pagkatapos tanggalin ang tubig at hugasin ang mga dumi na nakakabit sa ribs.
  2. Para sa sarsa; haluin ang barbeque marinade, pineapple juice, soy sauce, tomato ketchup, bawang, asukal, worcestershire sauce, paminta, paprika, at asin. Itabi.
  3. Sa palayok, lagyan ng kaunting mantika at pasuin ang bawat gilid ng mga ribs. Tanggalin ang mantika pagkatapos at ibuhos ang sarsa at tubig sa palayok. Takpan ito ng 2 oras sa mababang init.
  4. Pag nag 40 o 45 minuto, baliktarin ang mga ribs para pumantay ang pagluto. Pakuluin at tanggalin sa marinade. Wag tapunin ang natirang marinade.
  5. Ilipat ang mga ribs sa kawali para ‘i-ihaw’. Gamitin ang natitirang sarsa at ipahod ito sa ribs habang binabaliktad hanggang makulo ang kulay na gusto.
  6. Para sa gulay; Itunaw ang mantikilya bago ilagay ang mga gulay. Timplahan ng asin at paminta panlasa. Lutuin ng ilang minuto bago ihanda sa tabi ng ribs.
