Sweet and Spicy Eggplant

Sweet and Spicy Eggplant is a very savory dish made by sauteing eggplants, onions, garlic, oyster sauce, soy sauce, sugar, ketchup, black pepper, some red chillies, and green onions as a final touch. This eggplant dish is great as a side dish or a main dish to be topped over rice or noodles. Quick and simple but absolutely flavorful, this dish will surely awaken your senses, especially if you decide to add a bit more chili into it.

  1. Heat some oil in a pan, place in the eggplants, fry and flip until golden brown. Cook these in batches. Set aside.
  2. Remove some of the oil and saute onions till soft, then garlic till aromatic. Mix in oyster sauce, soy sauce, sugar, ketchup, and black pepper to taste. Add red chillies for some spice.
  3. Once the sauce thickens, add back the eggplants and mix till everything is coated in the sauce. Garnish with some green onions before serving.

This dish, sometimes called “Sweet and Spicy Braised Eggplant” is a dish that highlights the tender and silky texture of the eggplants, and the savory, spicy and slightly flavors of the sauce. To create this Yummy dish start by removing the ends of the eggplant and slicing these into 2 inch vertical strips. Set this aside  while you heat some oil in a pan, frying the eggplants till they’ve browned on all sides. Cook these in batches to make it easier to flip, set these aside on a strainer after to remove any excess oil. After, remove some of the oil and saute the aromatics-onions till soft, and garlic till aromatic, mixing in oyster sauce for a silky texture and umami taste, soy sauce for color ad savory flavor, ketchup for added color slight acidity, black pepper to taste adding some red chillies if you’d like. Adjust the spice level by removing or adding more chillies, or replace these with your choice of hot sauce. Mix everything well till it thickens slightly before adding back the eggplants. Toss these around till everything is coated in the sauce. Giving them a beautiful glaze. Garnish these with some chopped spring onions for a pop of color and liven the dish up a bit.
