Pimiento Spread

Pimiento Spread is a delightful filling or topping to crackers and bread. Made of just 4 ingredients, canned pimiento, yellow cheddar, white cheddar, and mayo. Mixed and chilled for just a few minutes for all the flavors to merge together and have a better texture. Then served with your choice of biscuits or baked goods.

This Pimento cheese spread is absolutely easy and super delicious. You’ll wonder why you’ve never thought of making this before! This Southern favorite that got its start in New York where cream cheese also got popular. It was in a 1980’s Good Housekeeping recipe that the two were mixed together with a number of other seasonings that it created this delightful spread which was and is still a hit with the masses.  This also took a turn in the industry as more farmers planted, roasted, and canned the pimentos, selling at least around 10 million cans in a year. While there has been new ingredient replacements and other additions, the main factor of this interesting spread is that it has roasted/canned pimentos and cheese, with the addition of your choice of mixes.

How to make homemade cheese pimiento spread recipe?

Gather these cheese pimiento spread ingredients: 2 cans red pimentos that are then strained for a few minutes before slicing these into small squares, squeezed in a stainer again just to make sure most of the juices are out. Removing the juices helps keep the spread from being too watery later on. Add in the grated yellow cheddar and white cheddar, and a cup or so of mayo, adding more later on to make the spread thicker or easier to ‘spread’. Let this chill in the fridge for a few minutes to an hour or so to help meld all the flavors together. Serve with some crackers on the side, as a filling for bread, or as a ‘palaman’ in the Filipino favorite – the pandesal.
