Ingredients

  • 1 kilo tilapia ( descaled )

  • 2/4 kilo pork belly ( cut to chunks )

  • Ginger ( sliced )

  • 1 medium onion ( sliced )

  • 6 cloves garlic ( minced )

  • Salt and pepper to taste

  • 2 small eggplant ( sliced )

  • 2 pieces tomatoes ( sliced )

  • 6 pieces green chillies

  • 2 cups water

  • ⅓ cup vinegar

  • 1 tablespoon sugar ( optional )

  • Fish sauce to taste

  • 5 red chillies

Directions

  • In a pan, saute pork belly chunks till it fully changes into a light brown color. Or till the fats start to render.
  • Place in the tilapia, ginger, onion, garlic, salt, pepper, eggplant, tomatoes, green chillies, water, and vinegar. Cover and simmer for 10 – 15 minutes.
  • Taste. Add in sugar if needed, then add in fish sauce to taste. Place in red chillies and let this cook for a few minutes.
  • Serve over rice.

It all starts with these Paksiw na Tilapia ingredients; pork belly sliced into chunks then cooked till the fats render and the pork starts to brown. Then simply place the tilapia (cleaned and descaled) on top, over this will be the aromatics like ginger, onion, and garlic which not only makes the dish more aromatic but also helps remove any fishy taste or smell.
