This Kinamatisang Manok recipe is a savory tomato-chicken spicy stewed dish made of cut up whole chicken, onions, garlic, ginger, a good amount of tomatoes, some pepper and fish sauce to taste, water, filled with carrots, potatoes, sugar, and green chillies.   1. Heat some oil in a pan, saute onions for a few seconds before adding in the garlic, then cook in the ginger before adding in the chicken.
  2. Saute chicken pieces until these change color. Mix in tomatoes and pepper. Stir in fish sauce and continue stirring till the tomatoes are soft enough to crush.
  3. Pour in water. Cover and simmer for 15 minutes. After, place in carrots and potatoes. Give it a little mix, cover and simmer till vegetables turn tender. Taste, add sugar if it’s too salty.
  4. Place in green chilies, mix and let this cook uncovered for a few minutes. Transfer to a plate before serving.

(Paano magluto ng Kinamatisang Manok?) it all starts with the Kinamatisang Manok ingredients; saute the aromatics, namely onions, garlic, and ginger till aromatic before adding in the chicken that’s been chopped into pieces to make it easier to cook and serve. These are cooked till changes in color, then mixed in with tomatoes that add color and acidity which makes this dish really awaken the taste buds and boost your appetite. Some pepper and fish sauce to add a slight tang and saltiness. Stir this dish often till the tomatoes are soft enough to crush. Pour in some water to help dilute the dish and avoid the bottom of the pan from burning, cover and simmer for a few minutes. Add in the chopped up carrots and potatoes, cover and simmer again till the vegetables are tender. Give this a taste and add some sugar if it tastes too salty or acidic, or add more fish sauce and or salt and pepper if needed. End this dish with a few green chillies for spice and let this simmer together for a few minutes before transferring this mouthwatering dish into a serving plate.

  • 1 small carrot (cut to wedges)

  • 1 small potatoes (cut to wedges)

  • 1 teaspoon sugar (optional)

  • 3 pieces green chillies

  1. Maginit ng mantika sa kawali, lutuin ang mga sibuyas bago isama ang mga bawang, at luya. Pagkatapos ihalo ang manok.
  2. Iluto ang mga manok hanggang mag iba ng kulay. Haluan ito ng kamatis, paminta, at patis. Ipagpatuloy ang paghalo hanggang lumambot ang mga kamatis.
