Binagoongang Tokwa at Talong, translated into “Tofu and Eggplant sautéed in Shrimp paste” is a simple but flavorful dish made of fried eggplant and tofu, simmered in a tomato based sauce that’s mixed with garlic, onions, shrimp paste, pepper, sugar, a bit of water, and some chillies for extra spice.

Ingredients

  • 1/2 kilo Eggplant, sliced bite-sized

  • 4 pieces tofu, sliced bite-sized

  • 3 cloves garlic, minced

  • 1 medium onion, chopped

  • 2 medium tomatoes, chopped

  • 4 tablespoon shrimp paste (bagoong alamang)

  • pepper to taste

  • 1 teaspoon sugar (optional)

  • 1/3 cup water

  • Red and green chili

  • oil for frying

Directions

  • In a pan with some oil, fry eggplants till they’ve browned. Set aside. In the same pan, fry the tofu until crispy and golden brown. Set aside.
  • Take out some of the oil, leaving only a tablespoon or so. Saute garlic till aromatic, add in onions and cook till soft. Then mix in tomatoes and cook till it’s easy to crush.
  • Mix in shrimp paste. Add in pepper, sugar, and water. Stir for a few minutes before adding the green chillies.
  • Place back the tofu and eggplant. Mix well. Top with red chillies. Serve with freshly cooked rice.

A recipe for vegetarians, adding chicken or some pork, and replacing the water with pork broth if you’d like to add more of a meaty flavor to this. This colorful dish is not only simple and  easy, but super flavorful and hits all the salty, spicy, slightly sweet, and savory notes that most classic Filipino dishes have.

Start with slicing the eggplant and tofu into bite sized pieces. Then prepare a pan with hot oil, fry these separately till the eggplant has browned and the tofu are fried till golden brown and crisp. Set aside to make the sauce. With a bit of the leftover oil, saute some garlic till aromatic, and onions till they’ve softened. Then add in chopped tomatoes, giving it a good stir until these are soft enough to crush. Give these a good mash to create a simple tomato sauce. Add in the shrimp paste, mix well before adding some black pepper, sugar, and water. Have a bit of a taste, adding more sugar or pepper if needed before adding in the green chillies. Mix in the fried tofu and eggplant, topping with more chillies if you’d like it even more spicy. Serve with some freshly cooked white rice and an iced cold drink.

  1. Sa kawali na may mantika, iprito ang mga talong hanggang mag kayumanggi. Itabi. Sa parehong kawali, iprito ang mga tokwa hanggang mag krispy at golden. Itabi.
