Ingredients
- 1/2 kilo Eggplant, sliced bite-sized
- 4 pieces tofu, sliced bite-sized
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 2 medium tomatoes, chopped
- 4 tablespoon shrimp paste (bagoong alamang)
- pepper to taste
- 1 teaspoon sugar (optional)
- 1/3 cup water
- Red and green chili
- oil for frying
Steps:
- In a pan with some oil, fry eggplants till they’ve browned. Set aside. In the same pan, fry the tofu until crispy and golden brown. Set aside.
- Take out some of the oil, leaving only a tablespoon or so. Saute garlic till aromatic, add in onions and cook till soft. Then mix in tomatoes and cook till it’s easy to crush.
- Mix in shrimp paste. Add in pepper, sugar, and water. Stir for a few minutes before adding the green chillies.
- Place back the tofu and eggplant. Mix well. Top with red chillies. Serve with freshly cooked rice.

Mga Sangkap :
- 1/2 kilo talong, hiniwa ng maliliit-na pahaba
- 4 piraso tokwa, tofu, hiniwa ng maliliit-na pahaba

Paano Lutuin :
- Sa kawali na may mantika, iprito ang mga talong hanggang mag kayumanggi. Itabi. Sa parehong kawali, iprito ang mga tokwa hanggang mag krispy at golden. Itabi.
- Tanggalin ang kaunting mantika, magiwan lamang mg 1 kutsara. Lutuin ang mga bawang hanggang mabango, iluto ang sibuyas hanggang lumambot. Haluan ng kamatis at lutuin hanggang mabilis itong durugin.
- Haluan ng bagoong alamang. Isama ang paminta, asukal, at tubig. Haluin ng ilang minuto at dagdagan ng berdeng sili.
- Ibalik ang tokwa at talong. Haluin bago lagyan ng pulang sili. Ihanda sa taas ng bagong lutong kanin.
