Creamy Mushroom Chicken

Creamy mushroom chicken is a delicious chicken dish, where fried chicken pieces and sliced button mushrooms is cooked in a creamy sauce made by all purpose cream, garlic, onion, chicken broth cube, soy sauce, parsley, salt and pepper. Using all purpose cream as the base, the combination of the rich and creamy flavour makes the creamy mushroom chicken dish a perfect ulam to your hot and steaming rice.

  1. Wash and prepare the chicken thighs and then place them to a container. Season with salt and pepper and massage well. Do this also to the other side.
  2. Heat some oil in a pan. Add the seasoned chicken (skin side first) and then sear for a few minutes. Flip to sear the other side. Sear until brown. Transfer them to a strainer or paper towel to drain excess oil. Set aside.
  3. Reduce the oil from the pan. Add the garlic and onions. Saute for a few minutes until aromatic. Then, add the mushrooms (drained) and saute.
  4. Add the seared chicken back to the pan. Add some soy sauce, chicken broth cube and water. Cover the pan and let it simmer for 15 to 20 minutes using medium heat. Flip the chicken halfway cooking to cook evenly.
  5. After 15 minutes, turn the heat to low before pouring the all purpose cream.  Mix well. Cook for a few more minutes until the sauce becomes thicker and creamier. Turn the heat off.
  6. Transfer the creamy chicken and mushrooms to a serving plate. Garnish with chopped parsley before serving (optional). Enjoy this with a big plate of hot steaming rice. Yum!

How to Cook Creamy Mushroom Chicken

Making the creamy chicken mushrooms is super easy. The whole process might take around less than an hour.

Start with choosing the chicken. You can pick any part that you like but for me, the chicken thighs are the most favorable ones (bonus if it’s boneless!) when it comes to juiciness and tenderness. Simply season them with salt and pepper and they are ready to be seared.

When searing, make sure to put the skin side first so that our chicken will end up crispy even when simmered in the creamy sauce for later. Searing adds flavor to the dish and helps lock up those natural meaty juices.

Saute your aromatics and mushrooms. You can use any mushrooms you like but the most convenient to use are the canned ones. For this recipe, I used the sliced button mushrooms. Take note that mushrooms adds only a subtle flavor. If you like it heightened, you can add more mushrooms.

To fully cook the chicken and to add a savoury hint to it, add the chicken back to the pan and then add the seasonings and water. Let it simmer for a few minutes and check from time to time is fork tender.

The last ingredient to add is the all purpose cream. Before adding the cream, you should lower the heat because milk burns fast (and we do not want a burnt taste!). What we want is for the chicken to ingest all of that creaminess slowly and not in a rush.  While this recipe settles with the creamy nature of the dish, you can experiment and add your favorite herbs and spices if you like.

  1. Hugasan at ihanda ang mga manok at ilagay ito sa lalagyan. Budburan ito ng asin at paminta at imassage ng konti. Gawin din ito sa kabilang side ng manok.
  2. Magpainit ng mantika sa kawali. Ilagay ang mga manok (nakadikit sa kawali ang balat) at isangkutsa ng ilang minuto. Baliktarin ang mga ito para maluto ang kabilang side. Kapag parehas nang brown ang balat, ilipat ang mga ito sa strainer o paper towel para tumulo ang sobrang mantika. Isantabi.
  3. Bawasan ang mantika sa kawali. Ilagay ang bawang at sibuyas at igisa ng ilang minuto hanggang maging mabango. Saka ilagay ang mushrooms (alisin ang sabaw) at igisa.
  4. Ibalik ang mga manok sa kawali. Lagyan ito ng toyo, chicken broth cube at tubig. Takpan ang kawali at hayaan itong maluto ng 15 – 20 minuto gamit ang katamtamang apoy. Baliktarin ang mga manok sa kalagitnaan para maging pantay ang luto.
  5. Pagkalipas ng 15 minuto, babaan ang apoy bago ilagay ang all purpose cream. Haluin ito ng mabuti at lutuin pa ng konti hanggang maging malabot at mas creamy ang sauce. Patayin ang apoy.
  6.   Ilipat ang creamy chicken and mushrooms sa serving plate. Budburan ito ng parsley sa ibabaw bago ihain (optional). Enjoyin ito kasama ng mainit na kanin. Yum!
