Ingredients
  

  • 2 cans/packs all-purpose cream 500 ml total
  • 1 can ube-flavored condensed milk 300 ml
  • Ube liquid flavoring a few drops or as needed
  • 1/2 cup grated cheese

Instructions
 

  • Chill the all-purpose cream in the refrigerator overnight.
  • Pour the chilled cream into a large mixing bowl. Beat with a hand mixer until doubled in volume and fluffy.
  • Add the ube-flavored condensed milk and a few drops of ube liquid flavoring. Continue beating until well combined.
  • Add the grated cheese and gently fold it into the mixture.
  • Transfer the mixture to a freezer-safe container and spread evenly.
  • Cover tightly and freeze for at least 6 hours, or until firm.
  • Let the ice cream sit at room temperature for a few minutes before scooping if it becomes too firm.
  • Serve with extra grated cheese or ube halaya, if desired.

Notes

  • Chill the all-purpose cream overnight for best whipping results.
  • Do not freeze the cream before whipping; it should be very cold but still liquid.
  • Add ube flavoring gradually because different brands can vary in strength.
  • If ube-flavored condensed milk is unavailable, use regular condensed milk and add ube flavoring to taste.
  • Whipping cream or heavy cream can be used instead of all-purpose cream.
  • For extra cheesy flavor, add more grated cheese or sprinkle additional cheese over each serving.
  • For an extra-special version, swirl ube halaya into the ice cream before freezing.
  • Store tightly covered in the freezer and avoid repeatedly thawing and refreezing.
