Sweet Potato Fritters are crispy on the outside, soft and naturally sweet on the inside. Made with mashed sweet potatoes, flour, sugar, and a few pantry staples, they're an affordable Filipino snack that's perfect for breakfast, merienda, or dessert. Ingredients
  

  • 500 g Sweet potatoes (kamote) peeled and sliced
  • 1 Cup All-purpose flour
  • 2 Tbsps Cornstarch
  • ¼ Cup White Sugar
  • 1 tsp Baking powder
  • ¼ tsp Salt
  • 1 Large Egg
  • ½ tsp Vanilla extract (optional)
  • 2-4 Tbsps Water or Milk (if needed)
  • Cooking oil for frying

Instructions
 

  • Peel and slice the sweet potatoes into chunks. Steam or boil until fork-tender, then drain well.
  • Mash the cooked sweet potatoes until smooth. Allow them to cool slightly.
  • In a mixing bowl, combine the mashed sweet potatoes, sugar, egg, and vanilla extract.
  • Add the all-purpose flour, cornstarch, baking powder, and salt. Mix until well combined. Add water or milk, one tablespoon at a time, if the mixture is too thick. The batter should be thick enough to scoop.
  • Heat enough cooking oil in a frying pan over medium heat.
  • Scoop about 2 tablespoons of batter and carefully drop it into the hot oil. Flatten slightly with the back of the spoon.
  • Fry for about 2–3 minutes per side or until golden brown and crispy.
  • Remove from the pan and drain on paper towels.
  • Serve warm as is or sprinkle with sugar for extra sweetness.

Notes

  • Orange-fleshed sweet potatoes produce naturally sweeter and creamier fritters.
  • Avoid adding too much liquid; a thick batter creates crispier fritters.
  • Fry over medium heat so the fritters cook evenly without burning.
  • For extra crunch, lightly coat the fritters with sugar immediately after frying.
  • Best served fresh while hot and crispy, but leftovers can be reheated in an air fryer or oven for a few minutes to restore their texture.
