Sardines Fishball Recipe

1 can sardines including the sauce 1 ½ cups all-purpose flour ½ tablespoon baking powder Salt and pepper to taste 2 tablespoons spring onions minced, or malunggay 1 onion minced 3 cloves garlic minced ½ cup water plus more as needed Oil for frying
Open the canned sardines and transfer them, including the sauce, into a mixing bowl. Mash well using a fork.
Add the minced onion, garlic, and spring onions or malunggay. Mix until evenly combined.
Add the all-purpose flour and baking powder. Season with salt and pepper.
Gradually add the water while mixing until you get a thick but scoopable mixture. It should not be too runny.
Heat enough oil in a deep pan over medium heat.
Using two spoons, scoop and shape the mixture into small balls. Carefully drop them into the hot oil.
Fry in batches until golden brown and crisp on the outside.
Remove the fishballs using a slotted spoon and drain on paper towels.
Serve hot with homemade fishball sauce or your preferred dipping sauce.
Add the water gradually because the moisture level may vary depending on the brand of sardines.
Keep the mixture thick enough to hold its shape when scooped.
Fry over medium heat so the fishballs cook through without browning too quickly.
For a more nutritious version, use finely chopped malunggay instead of spring onions.
