Ingredients
  

  • 10 pieces semi-ripe saba bananas
  • 1 1/2 cups 375 ml coconut milk
  • 3/4 cup 187.5 g brown sugar
  • 1 cup 250 g cooked sago optional

Instructions
 

  • Place the unpeeled saba bananas in a pot and boil for about 15 minutes, or until tender.
  • Remove from the water and let cool slightly. Peel the bananas and slice into approximately 2-inch pieces. You may also leave them whole.
  • In a bowl, combine the coconut milk and brown sugar. Stir until the sugar is mostly dissolved.
  • Pour the coconut mixture into a saucepan and bring to a gentle boil over medium heat. Stir occasionally to prevent the coconut milk from burning.
  • Continue cooking until the sauce begins to thicken and reduce.
  • Add the cooked saba bananas and gently stir to coat them with the sauce.
  • Cook for another 5 minutes, or until the sauce reaches your desired consistency.
  • If using cooked sago, add it during the last 2–3 minutes of cooking.
  • Remove from heat and serve warm, or allow to cool and serve chilled.

Notes

  • Use semi-ripe saba bananas so they remain firm during cooking.
  • Freshly squeezed coconut milk provides excellent flavor, but canned coconut milk is a convenient alternative.
  • Brown sugar gives the sauce a deeper caramel flavor and color.
  • Stir the coconut milk mixture regularly to prevent it from scorching.
  • Avoid cooking over very high heat, as coconut milk can burn easily.
  • Cooked sago is optional but adds a pleasant chewy texture.
  • The sauce will thicken further as it cools.
  • For a decadent dessert, serve warm Saging with Latik with a scoop of vanilla ice cream.
