Ingredients
  

  • 1 cup all-purpose flour
  • teaspoons baking powder
  • 2 tablespoons sugar
  • 1 cup milk
  • 1 large egg
  • 1 tablespoon oil or melted butter
  • ½ teaspoon vanilla extract optional
  • ¼ teaspoon salt
  • Oil or butter for greasing the pan
  • Pancake syrup for serving

Instructions
 

Make the Batter

  • Sift the all-purpose flour and baking powder into a mixing bowl to remove lumps.
  • Add the sugar and salt. Mix well.
  • Add the egg, milk, oil or melted butter, and vanilla extract. Stir until the ingredients are just combined. Avoid overmixing.
  • Let the batter rest for about 10 minutes.

Transfer the Batter

  • Pour the pancake batter into a squeeze bottle for easier portioning. You can also use a piping bag if preferred.

Cook the Mini Pancakes

  • Heat a skillet over medium-low heat and lightly grease it with oil or butter.
  • Gently squeeze small rounds of batter onto the skillet, leaving a little space between each one.
  • Cook until small bubbles appear and the edges begin to set. Carefully flip each mini pancake and cook the other side until lightly golden.
  • Repeat until all the batter is cooked.

Serve

  • Transfer the mini pancakes to a plate and serve warm with pancake syrup or your favorite toppings.

Notes

  • Keep the pancakes small and evenly sized so they cook quickly and consistently.
  • Medium-low heat works best because mini pancakes can brown quickly.
  • Don't overcrowd the pan. Leave enough space between each pancake for easy flipping.
  • A squeeze bottle makes it much easier to create uniform mini pancakes.
  • Don't overmix the batter. Stir just until the ingredients are combined for softer pancakes.
  • Vanilla extract is optional but adds a pleasant flavor and aroma.
  • Serve with syrup, honey, condensed milk, chocolate sauce, fresh fruit, or your favorite pancake toppings.
  • For kids, allow the pancakes to cool slightly before serving.
