A creamy and refreshing Filipino no-bake dessert made with ripe mangoes, honey graham crackers, all-purpose cream and condensed milk. Layered and chilled until soft, creamy and cake-like.
Prepare the Mangoes: Wash, peel, and slice the ripe mangoes into thin, even pieces. Reserve the nicest slices for the topping.
Make the Cream Mixture: Place the chilled all-purpose cream in a large mixing bowl. Add the condensed milk and whip until smooth, creamy, and slightly fluffy. Avoid overmixing.
Prepare the Dish: Use a clean rectangular or square glass baking dish. Arrange honey graham crackers in a single layer across the bottom, breaking some crackers as needed to fill the gaps.
Add the Cream: Spread an even layer of the cream mixture over the graham crackers using a rubber spatula.
Add the Mangoes: Arrange a layer of sliced ripe mangoes over the cream.
Repeat the Layers: Add another layer of graham crackers, followed by cream and mangoes. Continue until the ingredients are used, finishing with a generous layer of cream.
Decorate: Arrange the reserved mango slices or diced mangoes over the top. Sprinkle with crushed graham crackers.
Chill: Cover the dish and refrigerate for at least 6 hours, preferably overnight. This allows the graham crackers to soften and the layers to set.
Serve: Slice into portions and serve chilled.
Notes
Use fully ripe but firm mangoes for the best flavor and texture.
Carabao mangoes are especially delicious for this recipe, but other sweet mango varieties can also be used.
Make sure the all-purpose cream is well chilled before whipping.
Do not soak the graham crackers. They will naturally soften from the cream as the dessert chills.
For the best texture, chill the Mango Float overnight.
Keep the dessert refrigerated until serving.
