Equipment

  • Large pot
  • Large skillet or pan
  • Colander
  • Wooden spoon or spatula
  • Serving dish

Ingredients

  • 500 grams spaghetti noodles
  • 5 pieces bacon chopped
  • 5 pieces ham chopped
  • 1 medium onion minced
  • 3 cloves garlic minced
  • 200 grams mushrooms sliced
  • 370 ml evaporated milk
  • 284 ml cream of mushroom soup
  • 250 ml all-purpose cream
  • Salt to taste
  • Black pepper to taste
  • Grated cheese for topping
  • Bacon bits for garnish
  • Chopped parsley optional

Instructions

  • Cook the spaghetti according to the package instructions. Drain well and set aside.
  • In a large pan, cook the chopped bacon over medium heat until lightly crisp. Add the chopped ham and sauté until heated through.
  • Add the minced onion and sauté for about 1 minute. Add the garlic and cook for about 30 seconds.
  • Add the sliced mushrooms and sauté for another minute.
  • Pour in the evaporated milk while stirring. Add the cream of mushroom soup and all-purpose cream. Mix well.
  • Season with salt and black pepper to taste. Simmer gently for a few minutes until the sauce thickens.
  • Add the cooked spaghetti and toss until the noodles are completely coated with the creamy sauce.
  • Turn off the heat and transfer to a serving dish.
  • Top generously with grated cheese, bacon bits, and chopped parsley if desired.
  • Serve warm and enjoy!

Notes

For a creamier sauce, simmer gently and avoid boiling the cream mixture. Taste the sauce before adding salt since the bacon, ham, cream of mushroom, and cheese already contain salt. If the sauce becomes too thick, add a small amount of milk or reserved pasta water to loosen it. For the best texture, serve the carbonara while warm.
