Ingredients
  

  • 2 liters water
  • 1 cup unsweetened cocoa powder
  • 1 can 390 g condensed milk
  • 1 can 370 ml evaporated milk
  • Brown sugar as needed
  • 1 cup cassava flour or cornstarch
  • 1 cup water for dissolving the cassava flour
  • Pinipig optional

Instructions
 

Prepare the Chocolate Mixture

  • Bring 2 liters of water to a boil.
  • In a separate bowl, dissolve the cocoa powder in 1 cup of hot water until smooth.
  • Pour the dissolved cocoa mixture into the boiling water.
  • Add the evaporated milk and condensed milk. Stir until fully combined.
  • Taste the mixture and add brown sugar as needed to achieve your desired sweetness.

Thicken the Mixture

  • In another bowl, dissolve the cassava flour (or cornstarch) in 1 cup of room-temperature water.
  • Slowly pour the slurry into the boiling chocolate mixture while stirring continuously.
  • Simmer over low heat for about 5 minutes, or until the mixture thickens slightly and becomes smooth.

Cool the Mixture

  • Remove the pot from the heat.
  • Allow the mixture to cool completely.
  • Stir in the pinipig if desired.

Fill and Freeze

  • Using a funnel, carefully pour the mixture into ice candy plastic bags.
  • Tie each bag securely.
  • Arrange the bags flat in the freezer.
  • Freeze for at least 6 hours or overnight until completely solid.
  • Serve and enjoy!

Notes

  • Dissolve the cocoa powder completely before adding it to the pot to prevent lumps.
  • Stir continuously after adding the cassava flour slurry to achieve a smooth and creamy consistency.
  • Cornstarch can be used as an alternative if cassava flour is unavailable.
  • Let the mixture cool completely before filling the plastic bags to prevent condensation and make handling easier.
  • For extra texture, add pinipig, mini chocolate chips, crushed cookies, or marshmallows after the mixture has cooled.
  • Store the ice candies in the freezer for up to 1 month in an airtight container or freezer bag to maintain freshness and prevent freezer odors.
