Ingredients
  

  • ¾ cup all-purpose flour 95g
  • 1¼ cups white sugar about 250–280g
  • ¾ cup butter melted (170g)
  • 2 medium eggs
  • ¼ cup unsweetened cocoa powder 25g
  • 8 ounces chocolate about 226g, divided
  • 1 teaspoon salt

Instructions
 

  • Prepare the chocolate: Divide the chocolate into two portions. Melt one portion until smooth and chop the remaining chocolate into small chunks.
  • Prepare the pan: Line an 8-inch or 9-inch square baking pan with parchment paper, leaving some paper hanging over the sides for easy removal.
  • Mix the wet ingredients: In a large bowl, combine the melted butter, sugar, and eggs. Whisk until smooth and well combined.
  • Add the melted chocolate: Pour the slightly cooled melted chocolate into the butter mixture. Stir until evenly incorporated.
  • Add the dry ingredients: Sift the all-purpose flour and cocoa powder into the bowl. Add the salt and gently mix until just combined. Do not overmix.
  • Add the chocolate chunks: Fold the chopped chocolate into the brownie batter, distributing the pieces evenly.
  • Transfer to the pan: Pour the thick batter into the prepared baking pan. Spread it evenly with a spatula and gently tap the pan a few times to release large air bubbles.
  • Bake: Preheat the oven to 180°C (350°F). Bake for approximately 25–30 minutes.
  • Check for doneness: Insert a toothpick into the center. For fudgy brownies, the toothpick should come out with a few moist crumbs rather than completely dry. Avoid overbaking.
  • Cool: Remove the brownies from the oven and place the pan on a cooling rack. Allow them to cool before lifting them out using the parchment paper.
  • Slice: Once completely cooled, cut the brownies into 12 squares using a sharp knife. Wipe the knife between cuts for cleaner edges.
  • Serve: Serve the brownies as they are or with your favorite toppings. They are especially delicious with a scoop of vanilla ice cream.

Notes

  • Do not overbake: This is the most important tip for achieving a fudgy center. The brownies will continue to set as they cool.
  • A toothpick with a few moist crumbs is preferable to one that comes out completely dry.
  • Allow melted chocolate to cool slightly before combining it with the other ingredients.
  • Measure the flour accurately. Too much flour can make brownies dry and cakey.
  • Avoid overmixing once the flour is added. Mix only until the dry ingredients are incorporated.
  • Use good-quality chocolate and unsweetened cocoa powder for a richer chocolate flavor.
  • For cleaner slices, cool the brownies completely before cutting.
  • Add chopped walnuts, pecans, chocolate chips, or additional chocolate chunks for extra texture.
  • For an indulgent dessert, serve a warm brownie with a scoop of vanilla ice cream.
