Caramel Bread Pudding
Caramel Bread Pudding is a rich, creamy, and melt-in-your-mouth Filipino-style dessert made with loaf bread, eggs, milk, cream, and homemade caramel. This no-oven recipe is steamed until silky smooth, then chilled for a refreshing treat that's perfect for family gatherings, holidays, or whenever you're craving an easy yet elegant dessert.

For the Bread Pudding 7 slices loaf bread 6 large eggs 300 ml condensed milk 1 large can 370 ml evaporated milk 1 large can 1 cup all-purpose cream or heavy cream 1½ teaspoons vanilla extract
Make the Caramel Place the sugar in a saucepan over low heat.
Allow it to melt without stirring.
Gently swirl the pan until the sugar turns into a golden amber caramel.
Immediately pour the caramel into the bottom of your mold or llanera.
Set aside and allow it to harden.
Prepare the Bread Pudding Remove the crusts from the loaf bread and cut the bread into small cubes.
Pour the evaporated milk over the bread and let it soak for about 5 minutes.
Transfer the soaked bread into a blender.
Add the eggs, condensed milk, remaining evaporated milk, all-purpose cream, and vanilla extract.
Blend until smooth and creamy.
Steam the Pudding Pour the pudding mixture into the prepared caramel-coated mold.
Cover tightly with aluminum foil.
Steam over medium heat for 40 to 45 minutes, or until the center is fully set.
Remove from the steamer and allow it to cool completely.
Chill and Serve Refrigerate for at least 4 hours or overnight.
Run a knife around the edges before unmolding.
Invert onto a serving plate and slice before serving chilled.
Use day-old bread for the best texture and to reduce food waste.
Blend thoroughly for an ultra-smooth and creamy pudding.
Cover the mold tightly with aluminum foil to prevent water droplets from falling onto the pudding while steaming.
Check doneness by inserting a toothpick into the center. It should come out clean.
Chill the pudding completely before unmolding for clean slices.
Store leftovers in an airtight container in the refrigerator for up to 4 days .
This dessert can also be baked using the water bath (bain-marie) method at 180°C for 45 minutes if you prefer using an oven.
