Braised BBQ Chicken

This Braised BBQ Chicken is a delicious Filipino-style chicken barbecue made without a grill. Chicken thighs and drumsticks are marinated in a sweet and savory blend of soy sauce, ketchup, oyster sauce, calamansi, garlic, and Sprite, then seared and slowly braised until tender. Finished with a caramelized glaze, it's juicy, flavorful, and perfect with hot steamed rice and atsara.

Ingredients
  

  • 1 kilo chicken thighs and drumsticks
  • ¼ cup ketchup
  • cup soy sauce
  • 2 tablespoons oyster sauce
  • 5 tablespoons calamansi juice
  • 6 cloves garlic minced
  • 1 bottle 240 ml Sprite (or 7-Up/Coca-Cola)
  • 1 teaspoon ground black pepper
  • 2 tablespoons cooking oil

Instructions
 

  • Make shallow slits on each piece of chicken to help the marinade penetrate the meat.
  • In a large bowl, combine the Sprite, soy sauce, ketchup, oyster sauce, calamansi juice, garlic, and black pepper.
  • Add the chicken and massage well to coat evenly.
  • Cover and marinate for at least 1 hour, or overnight for best flavor.
  • Heat the cooking oil in a large pan over medium heat.
  • Remove the chicken from the marinade, reserving the marinade for later.
  • Sear the chicken until golden brown on both sides.
  • Pour the reserved marinade into the pan.
  • Cover and simmer over medium heat for 25–30 minutes, flipping the chicken halfway through cooking.
  • Remove the lid and continue simmering until the sauce thickens.
  • (Optional) Reserve a small amount of sauce, then cook the chicken over high heat until the skin caramelizes and develops a barbecue-like finish.
  • Transfer to a serving platter, drizzle with the reserved sauce, and serve hot with steamed rice and atsara.

Notes

  • Marinating the chicken overnight results in a deeper, richer flavor.
  • Making slits in the chicken helps the marinade reach the meat near the bone and ensures even cooking.
  • Sprite naturally tenderizes the chicken while adding a subtle sweetness and helping create a glossy glaze.
  • For a more authentic barbecue appearance, cook the chicken over high heat during the final few minutes until the skin caramelizes.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months.
