Steps:

  1. Prepare your eggplants by slicing the ends. Boil or grill these until the skin changes in color. Take these out to cool slightly, open to check if there are any damages. Chop into bits and set aside.
  2. Dissolve beef cube with 1 tablespoon of hot water. Mix in with the eggplant, also add in onion, garlic, eggs, salt, pepper, and flour. Mix until well combined.
  3. Add oil in a pan at medium heat. Once hot, scoop some of the mixture in, flipping to cook the other side once until both sides have browned. Once cooked, take these out.
  4. In another pan melt butter and saute in mushrooms for a few minutes. Add in flour and mix well. Pour in evaporated milk, beef cube, pepper, and soy sauce. Mix then cook for 2 minutes, or until the sauce has slightly reduced.
  5. Serve the eggplant patties with rice, topped with mushroom sauce, and garnished with parsley.

  • 1 cup evaporated milk

  • 1/2 beef cube

  • Pepper to taste

  • 1 1/2 teaspoon soy sauce

  • Parsley ( for garish )
