Cheesy Chicken Wings are crispy and delectably flavorful. Chicken wings marinated in salt, pepper, and calamansi, breaded in a flour, garlic powder, paprika, and cornstarch.   1. Place the chicken wings in a bowl, mix in salt, pepper, and calamansi juice. Set aside and let this marinade for 8 – 10 minutes.
  2. In another bowl, mix together all purpose flour, cornstarch, 1 teaspoon salt, ½ teaspoon pepper, garlic powder, and paprika.
  3. Evenly coat the chicken wings with the flour mixture. Shaking off any excess flour. In a pan filled with oil at medium heat, deep-fry the wings for 10 to 12 minutes, flipping till it looks golden. 
  4. Place in a strainer to remove any excess oils. Repeat with the other wings. Use the same pan, removing any residues from the first and/or second batch of frying. Set aside to let it cool down.
  5. Optional: to make these even crispier, double fry: Once cooled, fry these again for 2 minutes at high heat. Take these out and place them back in the strainer.
  6. In another pan, sauté butter with garlic until aromatic. Add in soy sauce, brown sugar, pepper to taste and water. Simmer till slightly reduced.
  7. Add back the fried wings and mix till these are fully coated with the sauce. Top with cheese. Cover to let these melt over the fried wings. Serve garnished with parsley (optional).
