Binagoongang Bangus with Sitaw which literally translates to Milkfish and String beans sauteed in shrimp paste is a really savory and umami tasting dish that uses milkfish, ginger, onion, garlic, tomatoes, shrimp paste, string beans, and chillies that really livens up the dish. This healthy dish is great for those who want a quick meal to make for dinner or to pack for lunch.

Ingredients

  • 1 kilo Boneless Bangus ( Milkfish )

  • 1 thumb-sized ginger ( julienned )

  • 3 cloves garlic ( chopped )

  • 1 medium onion ( chopped )

  • 2 medium tomatoes ( chopped )

  • 3 tablespoons shrimp paste

  • Salt and Pepper to taste

  • 2 tablespoons water

  • 1 bunch string beans

  • Red chillies

  • Oil for frying

Directions

  • Prepare the boneless bangus, season both sides with salt and pepper. Set aside. Heat some oil in a pan and fry the bangus until golden, then take these out.
  • Remove some of the oil and saute ginger, garlic, and onions until aromatic. Add in tomatoes and saute these for a minute. Add in the shrimp paste and mix well.
  • Season with pepper and add water. Bring to a simmer before adding back the bangus. Flipping to make sure both sides soak the sauce.
  • Add in the string beans and red chillies. Cover and cook for a few minutes until the string beans are tender. Serve while it’s still hot.

How to Make Binagoongang Bangus with Sitaw ?

Binagoongan dishes are quite popular in the Philippines, not only because these are really easy to make but it’s simplicity and the deliciously flavorful outcome just makes it even better. You can also use any meat of your choice for pork, chicken, beef, and seafood. Giving you a variety to choose from.

To make this dish, prepare your choice of bangus ( milkfish cuts ) for those not wanting the trouble of removing the bones or if you plan to make this for lunch outside the home. It would be best to buy boneless filets. Season these well with salt and pepper before heating enough oil in the pan to fry the fishes. Once both sides have browned, take these out and remove some of the oil. Keep around just 2 – 3 tablespoons and saute the aromatics like ginger, onions and garlic until it smells fragrant. Add in the tomatoes that will add some savory flavor and a bit of color into the dish, then the main flavoring, shrimp paste. This usually tastes strong so try adding 2 tablespoons first before adding a tablespoon at a time once you’ve mixed this sauce base. 

Once simmering, give it a taste and add more shrimp paste or some pepper if needed. To dilute this a bit, pour in some water and bring it back to a simmer before adding back the filets. Let it simmer for a bit on one side before flipping it to let the fish soak in the sauces. Add in some fibrous greens like string beans and for those who want some spice into their dishes, add as many chillies as you like. Cover and let this cook together for a few minutes or until the string beans feel tender. Serve over rice.

How to store this dish?

  1. After cooking or if keeping leftovers, let these rest until it’s at room temperature.
  2. Place the dish in an airtight container. If packing these for lunch, it’s better to already separate these with rice on the side ( or placed in the lunchbox to be ready to just get reheated at work ).
  3. Place these in the fridge for a week. But if you plan to keep these for longer, keep them in the chiller, if frozen it can last 2 – 3 weeks.

When reheating: place this in a microwavable container and heat up for 1 – 2 minutes or until it’s hot enough.
