Sinarsahang Pork Belly

Sinarsahang pork belly is a Filipino dish where pork belly slices, green peas and bell peppers are simmered in a tomato base sauce, made with tomato sauce, soy sauce, sprite, garlic, onion and pepper. This dish is made sweet with the fresh flavors from the lime soda, sinarsahang pork belly is best partnered with some hot steaming rice. Yum!

Ingredients

  • 1 kilo pork belly

  • 1 cup Sprite (or 7 up)

  • ⅓ cup of soy sauce

  • ⅓ cup of tomato sauce

  • Pepper to taste

  • 5 cloves of garlic

  • 1 medium onion

  • ½ cup cooked green peas

  • Red and green bell peppers

  • 1 to 2 cups of water

Directions

  • Prepare and slice the pork belly into serving portions. Transfer them to a big bowl. Add the Sprite, soy sauce and some pepper. Mix them to coat well. Let this marinate for an hour.
  • Heat a pan (no oil). Reserve the marinade. Sear the pork belly for a few minutes. Flip to sear the other side.
  • When oil starts to render from the fat, add the garlic, onions and the marinade. Add more water as needed. Cover the pan and let it simmer for 30 to 40 minutes until the pork is tender.
  • Add the tomato sauce and stir well. Continue cooking for 3 to 5 minutes using medium heat.
  • Add the green peas and bell peppers. Stir to mix. Turn the heat off.
  • Transfer the sinarsahang pork belly to a serving plate. Enjoy this together with some hot steaming rice. Yum!

SINARSAHANG PORK BELLY

Among all the pork cuts, a lot of us has a special bias to the pork belly. Pork belly is the resulting boneless cut once you remove the loin and the spareribs. The pork belly cut is suitable in a wide range of dishes because it has the right proportion of the skin, lean and fat. They can be made into fried, roasted, braised, grilled, curried, or simmered in your type of sauce.

As a fan of pork belly, I usually simply grill or fry my pork belly, then have them with my special suka. But sometimes, the oilyness of this type of cooking is too much, making me feel like my arteries are starting to clog. When I was still an apprentice in a restaurant, the head chef told me that when you have a fatty dish, you need to combine it with something sour or acidic to prevent the “suya” or the “umay”. I am enjoying my special suka but I believe that the pork belly can be prepared better.

This morning, I was supposed to have some fried pork belly with freshly chopped tomatoes. But unfortunately, I ran out of tomatoes. (Sad). But this gave me an idea to just simmer them in tomato sauce, which I have in the pantry. This is how the sinarsahang pork belly has been given birth! After a while, I started marinating the meat first in a marinade with some lime soda to make eat sweet and more tender.

HOW TO MAKE SINARSAHANG PORK BELLY

Sinarsahang pork belly is much easier than the lechon paksiw, if that is what you’re thinking.

Start by marinating the meat in a marinade made from lime soda and soy sauce. The lime soda will help in tenderizing the meat.

After marinating, sear the pork belly to render some meaty oil. Searing also adds flavor to the dish as it seals the juices in the meat. Then, add the marinade and let it simmer. It may take a while for the pork to become soft. Always check if you need to add some water to help it cook. Lastly, add the tomato sauce. If you want it extra sour, you can add some teaspoons of tomato paste. You can add some sugar to balance the taste.

Once the veggies are also cooked, then it’s ready! I really love  my sinarsahang pork belly with some hot steaming rice. The sour sauce, the meaty pork belly and my sticky rice is truly the combination you never thought you should ask for. You can also make this spicy by adding some red chilies. Yum!

  1. Ihanda at hiwain sa serving portions ang pork belly at ilipat sa malaking bowl. Idagdag ang sprite, toyo, at paminta. Haluing mabuti hanggang mabalutan ang karne. Imarinate ang karne ng isang oras.
  2. Magpainit ng kawali (walang mantika). I-sear ang pork belly ng ilang minuto. Baliktarin at i-sear din ang kabilang side.
  3. Kapag nagmantika na ang baboy, idagdag ang bawang, sibuyas at marinade sauce. Dagdagan ng tubig kung kinakailangan. Takpan ang kawali at hayaang maluto nang 30-40 minuto hanggang lumambot ang karne.
  4. Idagdag ang tomato sauce at haluing mabuti. Patuloy na lutuin nang 3 hanggang 5 na minuto gamit ang katamtamang apoy.
  5. Turn the heat off. Ilagay ang green peas at bell peppers. Pagkatapos ay haluin.
  6. Ilipat ang sinarsahang pork belly sa serving plate. Enjoyin kasama ng bagong saing na kanin. Yum!
