This No bake Graham Sans rival is a decadent deliciously indulgent crowd favorite! Made with just 4 ingredients, from a soft graham layered with thick sweet buttercream, and chopped cashews nuts, frozen for a few hours and ready to serve and enjoyed with a warm mug of coffee or tea to completely make a few minutes of your afternoon completely at peace and relaxed.

What is a Sans rival?

Sanr rival in essence is a sweet cake-like dessert made of meringue layers filled with French buttercream and chopped cashews. This delightful dish was brought into the Philippines by Filipinos who studied in culinary in France in the 1920’s to 30’s. they brought home many cooking and baking techniques, one recipe which greatly inspired the sans rival was the ‘Dacquoise’ a French dessert cake made of almond and hazelnut meringue, layered with buttercream or whipped cream atop a buttery biscuit base. Similar to its predecessor the sans rival is made with meringue layers but with cashews which are more abundant in the Philippines, a creamy and sweet buttercream and topped with more cashews for décor, chilled in the fridge till it’s a bit sturdy and easier to cut then sliced to enjoy with friends and family.

There are even other versions of the famous sans rival like the ‘silvanas’ or ‘sylvanas’ which are the smaller cookie version of the sans rival, layered similarly to the san rival but coated with cream and cashews. Other versions of the sans rival include adding flavorings or powders like chocolate, coffee, mocha, ube, buko panda, oreo and more. And similarly to the recipe below sans rivals have been recreated quite a few times to suit different occasions, time, and prices.

How refrigerator cakes and No bake Graham Sans rival became popular

This sans rival recipe is similar to most refrigerator cakes, tastes close to a sans rival without much hassle of making meringue or using the oven. The refrigerator cake or ice box cake is typically a dessert make with wafers or cake slices, layered and filled with cream, nuts, and fruits. Derived from desserts like the trifle which is a layered cake of sponge cake, fruit, custard, chocolate, jelly and more in each layer till it fills up the class bowl. ‘Refrigerator cakes’ are a term used to categorize a dish with similar processes. 

Introduced in the 1930’s to the United States, the icebox recipe was created to accompany the kitchen appliances it was to be made with. It was so accessible and easy to make that it rose in popularity due to commercials and the ease of premade ingredients to make the refrigerated dessert. There are also certain refrigerator ingredients associated to different countries; for example in America iceboxes were made with wafers stacked into a log with whipped cream used to stick these altogether, laid to the side and coated with another layer of cream to be chilled in the fridge overnight and served in slices, Americans also used pudding and graham crackers oppose to the waffles and cream, including some fruits like bananas or pineapples in-between the layers. Australia uses chocolate biscuits to be covered with sweetened whipped cream and the process of forming it into a log and refrigerating this overnight, served decorated with fresh berries, peppermint crisps, or crumbled chocolate. In the Philippines, a very popular dessert made with the national fruit, the mango. Called ‘Mango float’ a dessert variation of the ‘crema de fruta’ layered with graham crackers or lady fingers, a whipped cream and condensed milk filling, and fresh mango slices, coated with crushed graham or mangoes on top to seal, refrigerated and enjoyed with any meal of the day or just as a sweet afternoon snack.

A sweet instant no bake Sans rival right out of the fridge!

Ingredients

  • 1 cup cashew (chopped)

  • 1 cup unsalted butter

  • 1 can (350g) condensed milk

  • 25 to 30 Graham crackers

Directions

  • Prepare 1 cup crushed cashews. In another bowl cream butter till it looks light and fluffy, scraping the sides as you do. Add the condensed milk whip well and set aside.
  • To arrange, prepare a pan and place graham crackers at the bottom, top with 1/3 to ½ cup of cream spread evenly, sprinkle with 1/3 cup of cashews. Add another layer of graham and repeat till you make 4 to 5 layers. Top completely with cashews.
  • Cover and let it set in the fridge overnight.
  • Take a slice and enjoy!

Notes

  • For a less sweeter cream, use only half of the condensed milk.
  • You can also use all purpose cream or heavy cream to add to the butter and condensed milk to make a bigger mildly sweet batch.

Paano lutuin

  1. Maghanda ng 1 tasa ng tadtad na kasoy. Sa ibang mangkok batihin ang mantikilya hangang muka itong fluffy, ikayod ang mga gilid habang binabati. Dagdagan ng condensed milk at batihin muli. Itabi.
  2. Para ayusin,maghanda ng pan at ilagay ang graham sa ibaba, takpan ng 1/3 o 1/3 tasa ng crema at pahidin ng pantay, wisikan ng 1/3 tasa ng kasoy, muli lagyan ng graham crakers at ulit ulitin hangang makagawa ng 4 o 5 pantig. Takpan ang itaas ng mga kasoy.
  3. Takpan at palamigin sa ref magdamag.
  4. Hatiin at ienjoy!
