SINANTOMAS
Just like most of you, when I first heard the sinantomas, I thought it was a dish similar to a lechon paksiw– a dish with the famous Mang Tomas as sauce. But nope! We got it all wrong! #NoJudgements. Sinantomas is classic Filipino dish popularized in the province of Quezon. In fact, it is Quezon’s version of our favorite caldereta!
Unlike the classic caldereta, the sinantomas uses pineapple juice. A meat marinated with some pinepple juice is extremely tender with a unique fruity sweetness to the dish.
I got this recipe from a friend from Quezon. Since then, I used to follow her recipe to make our caldereta at home extra special. What I really love about this dish is that it uses spareribs, so we really get to lick and sip the sauces! One of the best ulams for rice.
HOW TO MAKE SINANTOMAS
If you have tried making a caldereta or any tomato-based dish before, then this recipe will be an easy peasy one for you.
Start by preparing the spareribs. If he ones you’ve got are large ones, try to cut them into smaller pieces first. The marinade is important. This will also be our sauce base for later. Make sure to marinate the meat in a combination of pineapple juice and soy sauce.
Before we proceed with the meat, stir fry your potatoes first just until light brown.
Start by searing the spareribs. Searing adds flavor to the dish as the natural meatiness is extracted. Saute the aromatics with the spareribs and the marinade. You may add water to fully cook the ribs. The crushed tomatoes basically will serve as the tomato base of this recipe. If you feel like adding more tomato flavor, you can simply add tomato sauce or tomato paste. Next, add the veggies and simmer until everything is cooked. I usually add some grated cheese in this type of dish since it helps balance the taste and adds creaminess to the dish. I added some red bell peppers for colors and some crunch but that ingredient is totally optional.
And the sinantomas is ready! I really love having sinantomas with some hot steaming rice. Yum!
Sinantomas Recipe (TAGALOG)
Mga Sangkap:
- 1 kilo ng pork spareribs
- 5 kamatis (hiniwa)
- 1 sibuyas (hiniwa)
- 4 butil ng bawang (hiniwa ng maliliit)
- ½ tasa ng pineapple juice
- ¼ tasa ng toyo
- ½ kutsarita ng paminta
- 2 patatas (o marble potatoes)
- ½ tasa ng green peas
- 1 tasa ng tubig (dagdagan kung kailangan)
- ¼ tasa ng grated cheese
- Patis o asin
- 1 maliit na red bell pepper (optional)
Paano Gawin:
- Ihanda at hugasan ang spareribs at ilagay sa lalagyan o bowl. Ilagay ang pineapple juice, toyo at timplahan ng asin at paminta. Haluin ng mabuti at imarinate ng 1 oras.
- Magpainit ng mantika. Ilagay ang mga patatas (o marble potatoes) at iprito hanggang maging medyo light brown. Alisin ang mga ito sa kawali at isantabi.
- Sa parehong kawali, ilagay ang mga spareribs. Isantabi ang marinade. Iprito ang mga spareribs at baliktarin para maluto ang kabilang side. Alisin ang mga ito sa kawali at ilipat ng lalagyan. Isantabi.
- Ilagay ang bawang, sibuyas at kamatis. Igisa ang mga ito hanggang maging mabango. Medyo durugin ang mga kamatis habang ginigisa.
- Ibalik sa kawali ang mga spareribs at ilagay ang ketchup at ang marinade. Haluin ng mabuti. Lagyan ng tubig para mas maluto ang ribs. Takpan ang kawali at hayaan itong maluto hanggang lumambot ang ribs.
- Kapag malambot na ang ribs, ilagay ang mga pinritong patatas at haluin. Takpan ang kawali at hayaan itong maluto. Ilagay ang grated cheese, green peas at patis (o asin). Haluin.
- Maglagay ng konting red bell pepper at haluin. (Optional step)
- Ilipat ang sinantomas sa serving plate. Ihain ito kasama ng malaking bowl ng mainit na kanin. Yum!
