Beer Battered Fish

Beer Battered Fish is a simple and tasty fish dish made crispier with this puffy beer based batter. In just a few steps; cream dory sliced to pieces, marinated in calamansi juice, salt and pepper. Dusted in cornstarch, coated in a beer batter made of all purpose flour, cornstarch, baking powder and a bottle of beer. Fried till crispy, then served with a side of mayo sauce.

  1. Prepare the cream dory by patting these with a kitchen towel to absorb any leftover moisture. Chop these into bite-sized pieces. Transfer into a bowl.
  2. Mix the dory together with calamansi juice, salt and pepper. Set aside.
  3. To make the batter; in a bowl mix all purpose flour, ½ cup cornstarch, salt, and baking powder. Pour in the beer, little by little, adding and mixing till you get a good consistency and that there are no lumps left. Set aside.
  4. Dust the fishes in cornstarch before coating in batter. Repeat for all the fishes. Fry these in batches in a pan filled with hot oil. Deep fry till it’s golden in color, flip if needed. Once golden, take these out.
  5. For the mayo dip, mix mayo, salt, pepper, and olive oil. Mix well. Serve the fried fishes with the dip and some chips on the side. Enjoy !

Chop the filet into bite sized pieces, place these into a bowl to be mixed with salt and pepper to taste, with some calamansi or lime juice just to help remove any fish taste and smell. 

Set aside while you make this easy beer batter; mix all purpose flour, cornstarch for extra crispiness, salt, some baking powder to help puff up the coating, pouring around only a third or so of the ice cold beer mixing these in little by little to avoid making the batter too wet.
