Ingredients
  

  • ½ kilo glutinous rice around 2 cups
  • 1 can 390 g ube-flavored condensed milk
  • 1 can 140 ml evaporated milk
  • 2 tablespoons margarine
  • cups water
  • 50 small lumpia wrappers
  • 10 tablespoons sugar for caramel coating
  • Cheese cut into strips
  • Cooking oil for deep frying

Instructions
 

  • Wash and rinse the glutinous rice thoroughly.
  • Place the rice in a pot with the evaporated milk and water.
  • Cover and cook over medium-low heat until the rice is fully cooked.
  • Transfer the cooked sticky rice to a large pan.
  • Add the ube-flavored condensed milk and margarine.
  • Cook over low heat, stirring continuously, until the mixture becomes thick, sticky, and difficult to stir.
  • Remove from the heat and allow the mixture to cool completely.
  • Lay a lumpia wrapper on a flat surface.
  • Place about 1 tablespoon of the ube sticky rice near one end and shape into a log.
  • Add a strip of cheese in the center.
  • Roll tightly, fold the sides inward, and seal the edge with water.
  • Repeat until all the filling is used.
  • Heat enough oil for deep frying.
  • Fry the wrapped turon until golden brown and crispy.
  • Sprinkle the sugar into the oil and allow it to caramelize, coating the turon evenly.
  • Remove and place on a wire rack to drain excess oil and maintain crispiness.
  • Serve warm and enjoy!

Notes

  • Let the sticky rice cool completely before wrapping to make rolling easier and prevent the wrappers from tearing.
  • Keep the lumpia wrappers covered with a damp cloth while assembling to prevent them from drying out.
  • Fry over medium heat for a crispy wrapper and evenly heated filling.
  • Use a wire rack after frying to keep the wrapper crunchy.
  • You may substitute 1–2 tablespoons of ube flavoring for the ube-flavored condensed milk. If using ube flavoring, add sugar to the sticky rice mixture to achieve your preferred sweetness.
  • Experiment with fillings like mozzarella, cheddar cheese, macapuno, or langka for different flavor variations.
  • This recipe yields approximately 50 pieces, making it ideal for parties, family gatherings, or selling as a home-based negosyo.
  • Store uncooked wrapped turon in the freezer for up to 1 month. Fry straight from frozen, adding a few extra minutes to the cooking time.
