Ingredients
  

For the Cake

  • 1 Can Ube Condensed Milk 390g
  • 1 ¾ Cups All-purpose Flour
  • ¼ Cup Melted Butter (or margarine)
  • 1 Tbsp Baking Powder
  • 4 Eggs
  • 1 tsp Vanilla extract
  • ¼ tsp Salt

For the Ube Yema Frosting

  • 1 Can Ube Condensed Milk 390g
  • ¾ Cup Evaporated Milk
  • 3 Egg yolks
  • 3 Tbsp Cornstarch
  • 1 tsp Vanilla extract
  • ¼ tsp Salt

Optional Topping

  • Grated cheese

Instructions
 

Make the Cake

  • In a mixing bowl, whisk together the eggs and melted butter until smooth.
  • Add the ube condensed milk and vanilla extract. Mix well.
  • Sift together the flour, baking powder, and salt.
  • Gradually fold the dry ingredients into the wet ingredients until a smooth batter forms.
  • Line a cake pan with parchment paper and pour in the batter.
  • Tap the pan gently to remove air bubbles and cover tightly with aluminum foil.
  • Steam over boiling water for about 45 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove from the steamer and let the cake cool completely.

Make the Ube Yema Frosting

  • Lightly beat the egg yolks in a saucepan.
  • Add the ube condensed milk.
  • Dissolve the cornstarch in the evaporated milk and pour into the saucepan.
  • Cook over low heat while stirring continuously until thick and smooth (about 10 minutes).
  • Stir in the vanilla extract and salt.
  • Allow the frosting to cool before spreading over the cake.
  • Top with grated cheese if desired.

Notes

  • Make sure the steamer is already boiling before placing the cake inside.
  • Cover the cake pan tightly with foil to prevent water droplets from falling onto the batter.
  • Do not overmix the batter to keep the cake soft and fluffy.
  • Chill the ube yema frosting for a thicker consistency before spreading.
  • If ube condensed milk is unavailable, substitute with regular condensed milk and add 1–2 tablespoons ube flavoring.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days. Best served slightly chilled or at room temperature.
