Tortang Sardinas (Filipino Sardine Omelette)

A quick, budget-friendly Filipino omelette made with canned sardines, eggs, and vegetables. Crispy on the outside and tender inside, this easy dish is perfect for breakfast, lunch, or dinner and pairs wonderfully with steamed rice or pandesal.

Ingredients
  

  • 2 Cans Sardines
  • 3 Large Eggs
  • 1 Piece Onion minced, medium size
  • 2 Cloves Garlic minced
  • Cup Carrot finely chopped
  • 2 Tbsps Spring onions chopped
  • 2 Tbsps All-purpose Flour optional, for better binding
  • Salt to taste
  • Ground Black pepper to taste
  • Cooking Oil for frying

Instructions
 

  • Separate the sardines from the sauce and transfer the fish to a bowl. Mash lightly using a fork.
  • Heat a little oil in a pan. Sauté the onion and garlic until fragrant.
  • Add the chopped carrots and cook for 2–3 minutes.
  • Add the mashed sardines and cook for another minute. Remove from heat and let cool.
  • In a large bowl, beat the eggs.
  • Add the cooked sardine mixture, spring onions, and flour.
  • Season with salt and black pepper. Mix until well combined.
  • Heat oil in a frying pan over medium heat.
  • Scoop portions of the mixture into the pan and flatten slightly.
  • Fry until golden brown, then flip and cook the other side.
  • Drain excess oil on paper towels.
  • Serve hot with ketchup, banana ketchup, or vinegar, alongside steamed rice.

Notes

  • Flour helps keep the omelette from breaking apart but may be omitted.
  • Don't over-mash the sardines; small chunks provide better texture.
  • Add cabbage, bell peppers, or malunggay leaves for extra nutrition.
  • Spicy sardines can be used for additional flavor.
  • Best served immediately while crispy.
