Sweet and Spicy Pork Ribs

Ingredients
  

  • 1 kilo pork ribs
  • 2 medium sweet corn quartered
  • 2 thumbs ginger sliced
  • Salt to taste
  • 1 tablespoon ginger minced
  • 5 cloves garlic minced
  • Pepper to taste
  • ¼ cup soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons brown sugar
  • 1 small bottle of Sprite
  • Red chillies sliced
  • Spring onions for garnish
  • Oil for sauteeing

Instructions
 

  • In a pot with corn, add enough water. Cover and bring to a boil. Cook until tender.
  • In another pot, add in pork ribs, sliced ginger, salt, and enough hot water to cover the ribs. Boil for 5 minutes. Remove the impurities. After boiling for 5 minutes, remove the ribs from the pot.
  • Heat oil in a pan, add the pork in and saute until browned. Add in minced ginger, garlic, and pepper. Saute for a few seconds.
  • Pour in soy sauce, oyster sauce, brown sugar, and Sprite. Cover and simmer for 30 to 40 minutes or until the ribs are tender.
  • Add in sweet corn, toss it until fully covered with the sauce. If you want some spice, sprinkle in red chillies and garnish with spring onions and cook for a minute.
