This easy Spam Fried Rice is made with day-old rice, browned Spam, scrambled eggs, mixed vegetables, garlic, onion, soy sauce, liquid seasoning, and butter. It is a quick, flavorful, and budget-friendly Filipino-style fried rice perfect for breakfast, lunch, or dinner.

Instructions
Crack the eggs into a bowl and beat until well combined.
Heat 2 teaspoons of oil in a large pan over medium heat. Pour in the beaten eggs and scramble until cooked. Transfer to a plate and set aside.
Using the same pan, add a little more oil if needed. Add the cubed Spam and cook until lightly browned and slightly crisp around the edges.
Add the minced garlic and sauté until fragrant. Add the chopped onion and cook until softened.
Add the mixed vegetables and stir-fry for 1 to 2 minutes.
Add the leftover or day-old rice. Break up any large clumps with a spatula and stir-fry until the rice is evenly combined with the Spam and vegetables.
Pour in the soy sauce and liquid seasoning. Add pepper to taste. Stir-fry until the seasonings are evenly distributed and the rice is heated through.
Add the butter and stir until completely melted and incorporated into the rice.
Return the scrambled eggs to the pan. Toss everything together until evenly combined.
Turn off the heat and transfer the Spam Fried Rice to serving plates. Serve hot.
Notes
Day-old refrigerated rice works best because the grains are firmer and less moist, resulting in better fried rice.
If using freshly cooked rice, spread it out on a tray and allow it to cool before stir-frying.
Brown the Spam well for slightly crispy edges and a deeper flavor.
Be careful when adding salt because Spam, soy sauce, and liquid seasoning are already salty.
Add chopped spring onions before serving for extra freshness.
For a spicy version, add chopped chili peppers or chili oil.
You can add bacon, ham, hotdog, or leftover chicken for additional flavor.
Refrigerate leftovers promptly and reheat only the portion you plan to eat.
