Ingredients
  

For the Chicken

  • 1 kg chicken wings
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon calamansi juice or lemon juice

For the Breading

  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon baking powder

For the Sweet Soy Sauce

  • 2 tablespoons butter or margarine
  • 3 cloves garlic minced
  • 3 tablespoons soy sauce
  • 5 tablespoons sugar
  • ½ teaspoon ground black pepper
  • 1 tablespoon water

Optional Garnish

  • Sesame seeds
  • Chopped spring onions

Instructions
 

  • Separate the chicken wings into drumettes and wingettes. Remove the wing tips if desired.
  • Season the chicken with salt, black pepper, and calamansi juice. Mix well and marinate for at least 1 hour.
  • In a bowl, combine the flour, cornstarch, salt, pepper, garlic powder, paprika, and baking powder.
  • Coat each chicken wing evenly with the breading mixture.
  • Heat oil over medium heat and fry the chicken wings for 10–12 minutes or until lightly golden.
  • Remove the wings and let them rest for about 15 minutes.
  • Increase the heat and fry the wings again until golden brown and crispy. Drain excess oil.
  • In another pan, melt the butter and sauté the garlic until fragrant.
  • Add the soy sauce, sugar, black pepper, and water. Stir until the sauce slightly thickens.
  • Toss the crispy chicken wings in the sauce until evenly coated.
  • Garnish with sesame seeds and chopped spring onions before serving.

Notes

  • Double frying makes the wings extra crispy.
  • Pat the chicken dry before breading for the crispiest coating.
  • Toss the wings in the sauce just before serving to keep them crunchy.
  • Adjust the sugar or soy sauce to suit your preferred balance of sweetness and saltiness.
  • Leftover wings can be refrigerated in an airtight container for up to 3 days. Reheat in an oven or air fryer to restore crispiness.
