Ingredients

  • 12 pieces shrimp peeled but with the tail still on
  • 1 salted egg
  • ½ teaspoon pepper
  • ½ teaspoon seasoning mix
  • 2 tablespoon spring onions chopped
  • 1 tablespoon cornstarch
  • 2 tablespoons all purpose flour
  • ½ cup breadcrumbs
  • 1 medium sized egg
  • 1 cup oil

Instructions

  • Slice the peeled shrimp pieces in half. Take the first half, but keep the tail side for later. Mix the first half with the food processor. Mix this with the salted egg and grind for 1 minute.
  • Transfer this into a clean bowl. Season with pepper and seasoning mix. Mix until well combined. Mix in spring onions.
  • In another bowl, mix cornstarch and all purpose flour. In another bowl, place in breadcrumbs. And in another, beat an egg.
  • Oil your hands, scoop the shrimp mixture. Place the shrimp tail on top. Form the paste into a ball. Coat in the flour mixture, then the egg, and coat with breadcrumbs.
  • Repeat until all the tails have been formed into balls. Heat oil in a pot. Once hot and slightly bubbling, add in the shrimp balls. Fry until browned. Make sure to cook these in batches to avoid overcrowding.
  • Serve and enjoy!
