Ingredients
  

For the Fish

  • ½ Kg Galunggong cleaned
  • ½ Tbsp Salt
  • Cooking Oil for frying

For the Sarciado Sauce

  • 1 medium Onion chopped
  • 3 cloves Garlic minced
  • 6 medium Tomatoes chopped
  • 1 Cup Water
  • 1 Large Egg beaten
  • Salt to taste
  • Ground Black Pepper to taste

Instructions
 

  • Rub the cleaned galunggong with salt and let it marinate for about 15 minutes.
  • Heat enough cooking oil in a frying pan. Fry the fish until both sides are golden brown and crispy. Remove and drain excess oil.
  • In another pan, heat a small amount of oil. Sauté the onion, garlic, and tomatoes until the tomatoes soften. Gently mash the tomatoes to release their juices.
  • Pour in the water and bring to a boil.
  • Season with salt and ground black pepper.
  • Slowly pour the beaten egg into the simmering sauce while stirring gently until egg curds form.
  • Add the fried galunggong to the sauce and simmer for about 1 minute to absorb the flavors.
  • Serve hot with steamed rice.

  • Fresh, ripe tomatoes give the sauce its naturally sweet and tangy flavor.
  • Fry the galunggong until crispy so it holds its shape when simmered in the sauce.
  • Avoid overcooking after adding the fish to prevent it from breaking apart.
  • For extra richness, use two eggs instead of one.
  • Best served immediately with hot steamed rice.
