First trim the edges of the bread slices. Flatten and set aside.
Open the canned peaches, take these out of the syrup and chop into small pieces. Set aside. Cut the mangoes, take out the flesh and set aside.
Place the mangoes, peaches, and sugar in a pan. Cook at low heat until this caramelizes. Stir occasionally. Pour in the slurry, cook until the sauce has reduced / thickened. Set aside to cool down.
Take the flattened bread and place a dollop of the filling on one end. Brush the sides with egg whites or water. Fold and wrap the filling. Seal with a fork.
Coat this in a bowl with beaten eggs. Then toss this in breadcrumbs. Make sure every part is covered. Fry in a pan at medium heat with hot oil until golden brown.
Flip to cook evenly. Once golden on all sides, take this out and cool slightly before enjoying.
