Peach and Mango Pie Recipe

Ingredients
  

  • 2 - 3 pieces ripe mangoes
  • 1 can Peach halves 400 grams
  • Loaf bread
  • ½ cup white sugar
  • Slurry 1 tablespoon cornstarch and 2 tablespoons water
  • 2 large eggs beaten
  • 1 cup bread crumbs
  • Oil for frying

Instructions
 

  • First trim the edges of the bread slices. Flatten and set aside.
  • Open the canned peaches, take these out of the syrup and chop into small pieces. Set aside. Cut the mangoes, take out the flesh and set aside.
  • Place the mangoes, peaches, and sugar in a pan. Cook at low heat until this caramelizes. Stir occasionally. Pour in the slurry, cook until the sauce has reduced / thickened. Set aside to cool down.
  • Take the flattened bread and place a dollop of the filling on one end. Brush the sides with egg whites or water. Fold and wrap the filling. Seal with a fork.
  • Coat this in a bowl with beaten eggs. Then toss this in breadcrumbs. Make sure every part is covered. Fry in a pan at medium heat with hot oil until golden brown.
  • Flip to cook evenly. Once golden on all sides, take this out and cool slightly before enjoying.
