Ingredients
  

For the Fish

  • ½ kilo boneless bangus milkfish
  • Salt to taste
  • All-purpose flour for coating (optional)
  • Cooking oil for frying

For the Sauce

  • 1 large onion sliced into rings
  • ¼ cup soy sauce
  • ¼ cup calamansi juice or lemon juice
  • ¼ cup water
  • Ground black pepper to taste
  • ½ tablespoon sugar optional

Instructions
 

  • Season the boneless bangus with salt and let it rest for 15 minutes.
  • Lightly coat each piece with all-purpose flour, if desired.
  • Heat oil in a frying pan and fry the bangus until both sides are golden brown. Remove and set aside.
  • In the same pan, sauté the onion rings until slightly softened. Remove half and reserve for garnish.
  • Add the soy sauce, calamansi juice, water, ground black pepper, and sugar. Simmer for a few minutes until well combined.
  • Return the fried bangus to the pan and spoon the sauce over the fish. Simmer for about 30 seconds per side.
  • Top with the reserved onion rings.
  • Serve immediately with hot steamed rice.

Notes

  • Boneless bangus is highly recommended for easier preparation and eating.
  • Lightly coating the fish with flour helps reduce oil splatter and creates a crispier texture.
  • Adjust the amount of calamansi juice depending on how tangy you like the sauce.
  • Lemon juice can be used as a substitute if calamansi is unavailable.
  • For extra umami flavor, add 1 tablespoon of oyster sauce or a small amount of rinsed tausi (salted black beans).
  • Avoid over-simmering the fish in the sauce to keep it crispy on the outside and tender inside.
  • Serve with hot rice and steamed or sautéed vegetables for a complete Filipino meal.
