Crispy, golden, pocket-sized Filipino mango pies made with flattened loaf bread and filled with sweet homemade mango filling. This easy fried dessert is inspired by the popular peach mango pie and is perfect for merienda or a simple homemade treat.
Peel and slice the ripe mangoes, then cut them into small cubes.
Place the mangoes in a pan and add the white sugar. Cook over low heat, stirring occasionally, until the mangoes release their juices and the mixture becomes thick and jam-like.
Mash some of the mango pieces while leaving a few chunks for texture. Remove from heat and allow the filling to cool completely.
Prepare the Bread
Place a slice of loaf bread on a chopping board and cut away all four crusts.
Flatten the bread using a rolling pin. If you don't have one, a smooth-edged glass can be used instead.
Repeat with the remaining bread slices.
Fill and Seal
Place some cooled mango filling on one side of the flattened bread.
Brush the edges with beaten egg or a little water. Fold the bread over the filling and press the edges together.
Use a fork to firmly seal and crimp the edges. Repeat with the remaining bread and mango filling.
Coat the Pies
Beat the eggs in a small bowl.
Place the breadcrumbs in another bowl.
Dip each prepared pie into the beaten egg, then coat completely with breadcrumbs. Set the coated pies aside while preparing the remaining pieces.
Fry
Heat enough oil for deep-frying over medium heat.
Fry the mango pies in batches until golden brown and crispy. Avoid overcrowding the pan so the oil temperature remains steady.
Remove the cooked pies and place them in a strainer or on paper towels to drain excess oil.
Serve
Serve the Mango Bread Pies warm and crispy. Enjoy them on their own or with chocolate syrup, your favorite dipping sauce, or a scoop of vanilla ice cream.
Notes
Use very ripe and sweet mangoes for the best filling.
Cook the mango mixture until thick before using it. A watery filling can cause the pies to open while frying.
