In a bowl, marinade pork chops with salt, pepper, and calamansi juice. Mix well.
Heat some oil in a pan. Sear the pork slices in batches until both sides have browned. Set aside and remove the excess oil.
Melt in butter and saute garlic until aromatic. Cook onions until softened. Add in mushrooms and saute for a minute. Add back the seared pork.
Toss these around. Add the pork cube, soy sauce, and water. Mix well. Cover and cook until pork is tender. This should be easily pierced with a fork.
Turn the heat to low. Pour in all purpose cream. Cook for a few minutes until the sauce thickens. Garnish with parsley before serving.
