These Cheesy Tahong are tender mussels topped with savory garlic butter, salted egg, scallions, and plenty of melted cheese. An easy and delicious Filipino seafood appetizer perfect for parties, family gatherings, and special occasions.
Clean the mussels thoroughly. Discard any cracked shells and any open mussels that do not close when tapped or pressed.
Bring water to a boil in a large pot. Add the mussels and cook until the shells open slightly.
Remove the mussels from the pot. Discard any mussels that remain closed after cooking.
Allow the mussels to cool slightly. Open the shells completely and remove one empty shell from each mussel, keeping the shell containing the meat.
In a bowl, combine the melted butter, minced garlic, minced scallions, and salted egg yolk. Mix well.
Spoon some of the garlic-butter mixture over each mussel.
Top each mussel generously with grated cheese.
Stovetop method: Arrange the stuffed mussels in a wide pan. Cover with a lid and cook over low heat for 2–3 minutes, or until the cheese melts completely. No additional water is needed.
Oven method: Preheat the oven to 180°C. Arrange the mussels on a baking tray and bake for 15–20 minutes, or until the cheese is melted and bubbly.
Transfer to a serving platter and serve immediately.
Notes
Choose mussels with closed, intact shells and a fresh smell.
Discard cracked mussels and any mussels that remain closed after cooking.
Clean and remove the mussel beards before cooking.
Do not use high heat when cooking in a covered pan because the garlic and butter may burn before the cheese melts.
Mozzarella, cheddar, or a combination of melting cheeses can be used.
For a spicy version, add chopped chili or chili flakes to the garlic-butter mixture.
Serve immediately for the best texture and flavor.
