Cheesy Potato Marbles

Ingredients
  

  • 500 grams marble potatoes
  • Water
  • 1 teaspoon salt
  • 250 grams bacon
  • 2 tablespoons butter
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 cup mushrooms sliced
  • 1 cup all purpose cream
  • ½ cup quickmelt cheese chopped
  • Salt and pepper to taste
  • Parsley for garnish

Instructions
 

  • In a pot add in the potatoes,enough water to cover the potatoes, and salt. Boil until the potatoes are tender. Strain and set aside.
  • In another pan, fry bacon until crispy and browned. Set aside.
  • Remove excess oil. Melt butter. Saute onions until soft, saute in garlic and cook until aromatic. Add mushrooms and cook for a few minutes.
  • Pour in all purpose cream and mix well. Add in cheese and mix until it melts. Add salt and pepper to taste. Add back the bacon and potatoes.
  • Mix well until well combined. Until everything is well coated in the sauce. Top with more bacon and some parsley.
