Tender beef slices and crisp broccoli tossed in a homemade sweet and savory garlic soy sauce. This easy Chinese-inspired dish is perfect for serving with steamed rice.
Marinate the Beef: Combine the beef, salt, pepper, soy sauce, oyster sauce, sesame oil, brown sugar, and some of the oil in a bowl. Mix well and marinate for 15–30 minutes.
Sauté the Aromatics: Heat some of the remaining oil in a large pan over medium heat. Sauté the garlic and ginger until fragrant.
Cook the Broccoli: Add the broccoli and stir-fry for 3–5 minutes until bright green and slightly crisp. Transfer to a plate.
Brown the Beef: Add the marinated beef to the same pan. Cook until browned, working in batches if necessary.
Simmer: Add the water and simmer for 20–25 minutes, stirring occasionally, until the beef is tender and the sauce reduces. Add a little extra water if needed.
Thicken the Sauce: Mix the cornstarch with a little cool water until smooth. Stir it gradually into the simmering sauce and cook until glossy and thickened.
Combine: Return the broccoli to the pan. Toss with the beef and sauce and cook for another 1–2 minutes until heated through.
Serve: Transfer to a serving plate, sprinkle with sesame seeds, and serve hot with steamed rice.
Notes
Slice beef thinly across the grain to help make it tender.
Sirloin and tenderloin are good choices for this recipe.
Avoid overcrowding the pan so the beef browns instead of steaming.
Keep the broccoli slightly crisp; it will cook again when returned to the sauce.
Soy sauce and oyster sauce are salty, so taste the dish before adding extra salt.
Dissolve cornstarch in cool water before adding it to the hot sauce to prevent lumps.
Refrigerate leftovers in an airtight container within two hours and consume within 3–4 days.
