Ingredients

  • 2 cups glutinous rice flour

  • 2 cups shredded buko (young coconut)

  • 3/4 cup coconut milk

  • 3/4 cup brown sugar

  • 2 tablespoons melted butter (or margarine)

  • Banana leaves

Directions

  • Wash and dry the banana leaves and let them pass through the flame for a few seconds to wilt a little and become pliable. Set aside.
  • In a bowl, combine the shredded buko and brown sugar. Mix gently.
  • Add the glutinous rice flour, coconut milk and melted butter. Mix until well combined. Continue mixing until you get a wet and sticky mixture.
  • Lay your banana leaves on a flat surface and brush with melted butter. Add around 3 spoons of the mixture to the banana leaf. Roll the banana leaf carefully. Fold the ends inwards to secure. Repeat these steps with the rest of the tupig mixture.
  • Layer the banana leaves in a frying pan. Let them cook for a few minutes using low medium heat.
  • When the leaves are starting to brown, flip them to cook the other side.
  • Keep cooking and flipping until you feel that the mixture is getting firm. You can also check the tupig from time to time.
  • When the tupig is firm, it is now ready. Transfer the tupig to a serving plate and enjoy with your hot tea or coffee. Yum!

Tupig is a Filipino sweet dessert made from glutinous rice with Shredded young coconut, coconut milk, brown sugar, butter wrapped in banana leaf. The word tupig means “flattened”. When you see one, you might notice that tupig resembles a flat log and it is also known in other names like intemtem or kangkanen.

Dear my lovely momshies, one of my goals in making my cooking vlogs is to help you guys prepare the most intricate recipes with the simplest recipes with minimal special equipment needed. If you have been subscribing to my vlogs for a while, you might notice that I try making versions of recipes, which are baked in the oven or grilled, into easier ones which uses the common pan we have at home.

And here is another recipe I want to share with you, one of my fave kakanins, the tupig. Ever since I travelled to Pangasinan, I always make sure to bring home a bunch of tupig as pasalubong. Since the pandemic, it is really hard to travel especially with all the health risks. I have been craving for tupig in a while and it is a very easy dish to make, I made some for my own.

With all the hassle of lighting up the charcoal and the actual grilling, making tupig in a frying pan is what I do as an alternative. It may not be the traditional way of preparing it but it gives the same output, the yummy and tupig wrapped in charred banana leaves. The smokey and aroma flavor is still there, so why won’t we choose the easier route, right?

HOW TO COOK TUPIG IN FRYING PAN

If you only know about the traditional preparation of tupig which is grilled, this will be a shock to you knowing that it can be easily done at home and in a FRYING PAN!

Before we actually start the cooking, it will be easier to prepare the banana leaves first by passing them quickly above the flame just to soften it a bit.

The tupig mixture is actually very easy to make. Simply combine the ingredients listed below (except for the butter) to make a white sticky mixture. Scoop some of the mixture into the banana leaves and then wrap and roll.

The last thing you need to do is to place them in a flat frying pan to cook. Remember to look after them from time to time to prevent one side from burning. We want the smokey flavor and aroma but not the burnt taste.

The cooking time of this really varies, so it would be better to check them after a few minutes to see if they are already firm. Now that your tupig is ready, you may now enjoy your afternoon snack. Happy eating!

Paano Gawin:

  1.  Hugasan at tuyuin ang dahon ng saging. Padaanin ito ng mabilis sa apoy para lumambot. Isantabi.
  2. Paghaluin ang kinayod na buko at asukal na pula sa isang bowl.
  3. Sunod na ilagay ang glutinous rice flour, gata at tinunaw na butter. Haluin nang tuloy tuloy hanggang magkaroon ng basa at malagkit na mixture.
  4. Ilatag ang dahon ng saging at I-brush ng butter. Maglagay ng 3 kutsara ng tupig mixture. I-roll nang dahan dahan ang dahon at I-fold ang dulo para ma-secure ang laman sa loob. Gawin ito sa iba pang ingredients.
  5. I-arrange sa frying pan ang mga ginawang tupig. Hayaan itong maluto ng ilang minuto gamit ang mababang katamtamang apoy.
  6. Kapag nagbbrown na ang dahon, baliktarin ang mga ito para maluto naman ang kabilang side.
  7. Ituloy lang ang pagluluto at pagbabaliktad hanggang maging buo na ang tupig. Pwede mo itong icheck from time to time.
  8. Kapag buo na ang tupig, ready na ito. Ilipat ang tupig sa serving plate at ihain kasama ng mainit na kape o tsaa. Enjoy!
