EGGY WOW!

Egg is an umbrella term to the product laid by birds. The number of eggs which are edible is unknown, but the chicken, duck, and quail eggs are the top eggs used in the Philippines. Chicken egg itself has varieties– the brown as organic eggs while the white as regular eggs.

The egg which we will be using in this recipe is the regular chicken egg. Their price usually range from 9 to 10 pesos nowadays.

Eggs are one of the most versatile food item. You can simply fry, boil, steam, and bake eggs if you like. Aside from eating them on its own, eggs can also act as an emulsifier in salad dressings, muffins, breads and in cake. Beaten egg whites can contribute to the fluffiness of waffles. Egg wash is commonly added on top of pastries to give it a shiny coat.

For this recipe, the egg will be our main meat. Just like the chicken and pork meats, the egg is also considered as a high quality source of protein. By combining it with some veggies, this egg and cabbage recipe will surely be super healthy and delicious!

STIR FRY CABBAGE AND EGG

If you ever ran out of recipes, always know that stir frying is always an option. Stir frying is one of the most common methods of cooking, where you fry the food quickly in high heat while stirring. You can stir fry basically anything, but make sure you have the aromatics as the base.

I have a big whole cabbage at home which I do not know how to cook. I usually make some okonomiyaki (giant takoyaki) but I feel like making the cabbage as an ulam to make me and my family fuller since I will be cooking this for lunch. Since I only have limited ingredients left in the pantry, staying with the classic style of cooking would be the answer.

What I love most about cabbage is that it has a large yield. You can observe this once the cabbage is chopped. To make the ulam a veggie and meat combo, I grabbed the eggs left at the pantry and turn them into scrambled eggs. This ulam combination is super filling! Kanin nalang ang kulang!

HOW TO MAKE STIR FRY CABBAGE AND EGG

This stir fry cabbage and egg recipe is one of the easiest dishes to make. If you have tried any stir fried dishes in the past, then this recipe will be much easier for you.

Everything starts with chopping your veggies. Chopped cabbage is rare on the market so it is more likely that you chop them at home. Take note that the cabbage has a large core/stem at the bottom. You need to remove this since this part is too fleshy and thick and it won’t cook well. To remove the core faster, reveal it by slicing the cabbage in half.

Cabbage is the main veggie for this dish but feel free to add other veggies you like. I added carrots and red bell peppers for flavor and color. If you will be chopping a lot of veggies, it might be more convenient if you use vegetable choppers to also save time.

Once the veggies are prepared, lets prepare the eggs. We will be using around 4 pieces of eggs for this recipe but feel free to add more if you like. Crack each egg first in a separate bowl before adding onto the main bowl to prevent adding an egg that is rotten. Cook the eggs first, just how you cook scrambled eggs. Then, set aside.

For the veggies, simply stir fry them. I like mine a bit crunchy so I just cooked them for a few minutes. If you want them to be soft, cook a little longer. The last part of this recipe is adding the egg back to the pan and saute them altogether. Season them how you like. You may add a pinch of sugar for a hint of sweet tone. Then, it’s ready!

Dishes like this are usually enjoyed as an appetizer or side dish. But for me, I like it on top of my rice! You can add sesame seeds or chopped spring onions or even drizzle some mayo to make it more special. If you’re tired of it, you can also turn this into lumpia! Yum!
