Ingredients

  • 1 kilo mussels

  • 1 thumb-sized ginger (chopped)

  • ½ tablespoon salt

  • 2 tablespoons butter

  • 3 cloves garlic

  • 3 tablespoons breadcrumbs

  • 1 cup evaporated milk

  • 1 cup shredded cheese

  • pepper to taste

  • spring onions (for garnishing)

Directions

  • Heat enough water in a pot to cook the mussels. Add the chopped ginger and salt and let it boil.
  • Add the mussels and let them cook until the shells open.
  • Transfer the cooked mussels in an ice bath to halt the cooking process.
  • Fully open the mussel shell only keep the shell where the mussel is intact. Remove the “woodhair” if there’s any. Repeat these steps with the rest of the mussels.
  • For the cheese topping, melt some butter in a pan and sauté the garlic. Add the breadcrumbs and let it toast until light brown. Add the evaporated milk and quick melt cheese. Let the cheese topping melt and become thick. Season with black pepper.
  • Arrange the mussels in a baking pan. Pour a gorgeous amount of cheese sauce on top. Let it bake for 10 to 15 minutes using 180C or 370F until the cheese is bubbly.
  • Transfer the baked mussels in a flat serving plate and sprinkle some chopped spring onions or parsley. Enjoy!

Mussels are often called the “chicken of the sea”. When you buy mussels from the market, the first thing you will notice are the shells. Some people confuse mussels with clams. You can differentiate the two by looking at their shells. If you have watched the Little Mermaid, the “shells” often featured there are the clams. Mussels have longer shells which is green in color. When you open a mussel shell, it will look like a butterfly.

The actual edible mussel is the small orange and black meat inside the shell. It has an ocean taste which is not overpowering. It also has a good mushroom-like texture which best partners to other ingredients. Mussels are light to the tummy which makes it a good snack but more of an appetizer.

HOW TO COOK BAKED TAHONG

Baked tahong would only comprise two major ingredients—the tahong and the special cheese sauce.

For the tahong simply boil them in water with ginger and salt. When they start to open, it means they are cooked. The edible mussels would be too gummy or rubbery when overcooked. You can prevent this by putting the cooked mussels in a bowl with cold water.

For the special cheese sauce, start by sautéing some garlic in butter and toasting breadcrumbs in it. You might be curious on putting toasted breadcrumbs in a cheese sauce. It will add a bit of crunch on the cheese sauce and will help balance the natural saltiness in it. Add the milk and cheese and stir until it becomes a thick and yummy cheese sauce.

  1. Pakuluan ang mga tahong kasama ang luya at konting asin.
  2. Lutuin ang tahong hanggang bumukas ang mga shells.
  3. Ilipat ang pinakuluang tahong sa malamig na tubig.
  4. Buksan ang shell at isantabi lamang ang mga shells kung saan nakadikit ang tahong. Alisin ang woodhair kung meron. Gawin ang mga steps na ito sa iba pang tahong.
  5. Para sa cheese topping, tunawin ang butter sa isang kawali at igisa ang bawang. Ilagay ang breadcrumbs at tustahin hanggang maging light brown. Ilagay ang evaporated milk at cheese at haluin hanggang matunaw. Budburan ng paminta.
  6. I-arrange ang mga tahong sa isang baking pan. Lagyan ang mga ito ng cheese topping at i-bake ng 10 hanggang 15 minuto gamit ang 180C o 370F hanggang bumula ang cheese.
  7. Ilagay ang baked tahong sa isang flat na serving plate at budburan ng spring onions o parsley. Enjoy!
