HOW TO COOK TOKWA’T MANOK

The steps in making tokwa’t manok is almost similar with the famous tokwa’t baboy but with extra special and healthy ingredients. First, the tofu is fried until golden brown and crispy. The next steps will involve sautéing the chicken, the aromatics and the seasonings. This will result to a sweet and savoury sauce. Add the fried tofu and coat it with the sauce. Ingredients

  • 250 grams tofu

  • 1 tablespoon oil

  • ½ kilo boneless chicken thigh (cut into serving pieces)

  • 1 medium-sized onion, diced

  • 4 cloves of garlic, minced

  • 2 pieces tomatoes, chopped

  • 3 tablespoons salted black beans

  • 1 tablespoon soy sauce

  • 1 tablespoon oyster sauce

  • 2 tablespoons vinegar

  • 1 cup water

  • sugar, salt and pepper to taste

  • chopped kinchay

  • chopped chillies

Directions

  • Prepare the tofu and cut into serving pieces. Heat some oil in a pan and fry the tofu pieces until crunchy and golden brown. Set aside.
  • Heat some oil in a pan. Sauté the boneless chicken thigh until the water and oil comes out. Let it cook until the chicken becomes light brown.
  • Once browned, push the chicken to one side of the pan. Sauté some onions, garlic and tomatoes for a few seconds. Sauté all the aromatics and the chicken together. Add the salted black beans, soy sauce, oyster sauce, vinegar and water. Let it simmer for 5 minutes. Do not stir too early to avoid the raw taste of the vinegar.
  • Stir to mix the ingredients well. Taste the sauce and adjust the taste with sugar, salt and pepper.
  • Add the fried tofu and stir gently to coat the tofu with the sauce. Add some chopped kinchay and chillies. Stir well.
  • Transfer the tokwa’t manok in a serving plate and top with more kinchay and chillies. Serve with hot steaming rice.

Paano Magluto ng Tokwa’t Manok

  1. Ihanda ang tokwa at hatiin ito sa maliliit na squares. Magpainit ng mantika at iprito ang tokwa hanggang maging crunchy at golden brown. Isantabi.
  2. Magpainit ng mantika. Iprito ang mga piraso ng manok hanggang lumabas ang tubig at mantika nito. Hayaan itong maluto hanggang maging light brown.
  3. Kapag naging brown na, ipush ang mga manok sa isang side ng kawali. Mag-gisa ng sibuyas, bawang at kamatis ng ilang minuto. Igisa ang mga ito kasama ang mga manok. Ilagay ang tausi, toyo, oyster sauce, suka at tubig. Hayaan itong maluto ng 5 minutes. Wag munang haluin para hindi magkaroon ng hilaw na lasa ng suka.
  4. Haluin ang mga ito ng maayos. Tikman at i-adjust ang lasa gamit ang asukal, asin at paminta.
  5. Ilagay ang pinritong tokwa at haluin hanggang malagyan ang mga ito ng sauce. Maglagay ng hiniwang kinchay at sili. Haluin ng mabuti.
  6. Transfer the tokwa’t manok in a serving plate and top with more kinchay and chillies. Serve with hot steaming rice.
  7. Ilipat ang tokwa’t manok sa isang serving plate at lagyan ng hiniwang kinchay at sili. Iserve kasama ang mainit ng kanin. Enjoy!
