Quick Stir-fry Egg Noodles Recipe

  1. Soak the vermicelli noodles in hot water to soften. Set aside.
  2. Slice the cabbage and carrots into thin strips.
  3. Crack 3 eggs in a bowl and whisk. Heat some oil in a pan and cook the scrambled eggs. Gently chop them into small pieces. Set aside.
  4. Heat some oil in the same pan. Add the garlic and spring onions and saute for a few minutes. Add the chopped cabbage, carrots, softened vermicelli noodles, chicken broth cube, soy sauce, oyster sauce and sugar. Toss gently and let it cook until all ingredients are cooked. Season with some pepper. Add the scrambled eggs and toss gently.
  5. Transfer the stir fry egg noodles to a serving plate. Serve this as a snack or meal together with some puto or loaf bread. Yum!

Know your Noodle History

Noodles is a type of carbohydrate source you can eat if you don’t feel like eating rice or bread. This food source can vary in color, food used to make, sizes and in thickness.

Noodles and pasta have been used interchangeable. But do we really know how to differentiate the two? Noodles are usually made from flour while pastas are made from durum wheat.  Regarding the salt, most noodles are usually salted while pastas are not. Most noodles are prepared to be thin strips while pastas vary in shapes and sizes. Some of the most common noodle varieties in the country includes vermicelli, lomi, canton and bihon. Some of the most famous pasta varieties include spaghetti, linguine, lasagna and macaroni.

QUICK AND EASY STIR FRY EGG NOODLES

This dish has been trending from most cooking food groups right now so I decided to also test it out and create some on my own. What I love about this dish is that it uses simple ingredients which we already know how to prepare. As it involves only stir frying, then it’s already sounds super easy, right?

The scrambled egg and vermicelli noodles combination is very new to me since I usually prepare some common stir fry noodles with some veggies in it. I never had tried adding scrambled eggs, only boiled eggs or quail eggs. The egg and noodles is one combo you should definitely try! Just like with rice, the eggs can definitely bring the noodles into life!

HOW TO MAKE SOME QUICK AND EASY STIR FRY EGG NOODLES

This recipe is really super QUICK and EASY just like what the name suggests.

For this dish, we are going to use vermicelli noodles. You can easily spot this noodles at the grocery by looking for very thin white noodles. These noodles are so compact in the packaging and are not easily breakable compared to other noodles. Unlike other noodles, the vermicelli noodles need to be pre-soaked before cooking for it to cook faster.

In this recipe, I used only cabbage and carrots for the veggies. If you would like to modify this dish and add more veggies, feel free to do so. Our main meat for this recipe would be the eggs. (Yes, eggs are good sources of proteins!)

When all the ingredients are prepared, the last thing is to add the ingredients to the pan one by one and stir fry them together! No other hidden steps!

I really love having puto or toasted bread alongside of this umami noodles. Super yummy and filling!

Ingredients

  • 80 grams vermicelli noodles

  • 3 large eggs

  • 1 ½ tablespoons of soy sauce

  • 2 tablespoons of oyster sauce

  • Half cabbage (around 150 grams)

  • 1 small carrot

  • 3 cloves of garlic

  • 2 tablespoons of spring onions

  • Pepper to taste

  • 1 teaspoon of sugar

  • ½ piece chicken broth cube

  • Oil for frying

  1. Ibabad ang vermicelli noodles sa tubig para lumambot. Isantabi.
  2. Hiwain ang repolyo at carrots sa maninipis na strips.
  3. Batihin ang mga itlog sa isang bowl. Magpainit ng mantika at lutuin ang binating itlog. Medyo hiwa hiwain ito sa maliliit na piraso. Isantabi.
  4. Magpainit ng mantika sa parehong kawali. Ilagay ang bawang at spring onions at igisa ng ilang minuto. Sunod na ilagay ang repolyo, carrots, pinalambot na vermicelli noodles, chicken broth, toyo, oyster at asukal. Haluin ang mga ito hanggang maluto lahat ng ingredients. Timplahan ito ng konting paminta. Huling ilagay ang itlog at haluin.
  5. Ilipat ang stir fry egg noodles sa serving plate. Ihain ito bilang meryenda o samahan ng puto o loaf bread. Yum!
