Pork Sinigang

Pork Sinigang or Sinigang na baboy is Filipino pork soup and made with pork belly chops, chopped okra, garlic, tomatoes, green chili, onion,, radish, eggplant, string beans, spinach, Sinigang sa Sampalok original mix and seasoned with fish sauce and pepper. It an easy mix of ingredients dropped in a pot and mixed together to form a wonderfully hearty stew that’s perfect for the rainy weather or on cold and sick days that you just want to warm up in. it’s a Filipino comfort food that anyone can recreate and feel like they’re back at home.

What is a Sinigang?

Sinigang is a soup dish with a sour broth closely similar tasting to a Chinese hot and sour soup and Thai tom yum with a clearer broth and Filipino flavor. There are a variety of sinigang with different meats, meat cuts, like milk fish or bangus, shrimp, squid, beef chunks, pork chunks, to ground beef, sometimes even using canned goods of pre cooked meats or just a mix of vegetables. The broth is flavored with the tamarind fruit or nowadays a pack of sinigang mix to give it it’s iconic sour flavor, this is then mixed in with vegetables like tomatoes, spinach, onions, white radish, eggplant, garlic, and green sili or green long peppers for an extra kick. Some sinigang recipes also include fillers like taro root and other leafy vegetables not only for the color, it also is great for sipping up the soup base which makes each bite as flavorful. Tamarind fruit, tamarind paste, or the sinigang mix which is the main ingredient that makes the sinigang. Some households also use green mangoes and kamias to make it lip smacking sour or just as a replacement for the Tamarind. The Tamarind is a tropical fruit found in Africa and Asia, in the Philippines some household even have them in their backyard or garden ready to be picked from the tree or those fallen on the ground to be cleaned and added into the soup or sometimes shared by neighbors since it can also be eaten as a sweet and is popularly made into a tamarind flavored candy, or dried and coated with sugar in the Philippines.

How to do Pork Sinigang?

Pork Sinigang which directly translates to Sinigang na baboy in Tagalog is a dish that just needs a few minutes of boiling and you’ve got yourself a nice big pot of savory, yummy, and healthy goodness. All you need is a nice big pot over a stove with the pork chunks cleaned and placed in, simmered for a few minutes to remove the scum. Cook the pork till it turns tender enough for fork to be easily pierced through. Take the pot out of the heat to separate the pork and broth. Using the same pot with oil, chopped garlic, red onions, and cook till these are aromatic, add the pork and sauté them for a bit. Add the sliced tomatoes and fish sauce to give it a tangy taste. Season with pepper and pour in the broth. Cover and let this simmer all together to help the flavors really blend together. Add the radish, green sili for that kick, eggplant, and string beans, mixed and simmered till the vegetables are nice and soft. To give it that iconic sinigang flavor, add the Knorr Sinigang sa Sampalok mix, stir this well before adding the spinach and cover it for a few minutes till the spinach is soft and the broth tastes nicely sour and flavorful. Now  it’s ready to be served with a steaming cup of rice.

A soured rich stew made of pork chunks and vegetables

Ingredients

  • 5 cups water

  • 1/2 kilo pork belly

  • 4 pieces okra (chopped)

  • 3 cloves garlic (minced)

  • 3 pieces tomatoes

  • 3 pieces large green sili

  • 1 red onion (chopped)

  • 1 medium sized radish (sliced)

  • 1 eggplant (sliced)

  • 1 bundle string beans

  • half bundle water spinach

  • 44g Knorr Sinigang sa Sampalok Original Mix

  • ¼ cup fish sauce

  • ground black pepper

  • cooking oil

Directions

  • In a pot at medium heat, pour in water and add the pork in. Cover and let this simmer for 45 minutes or till the pork is tender. Separate the pork and broth and set both aside.
  • Use the same pot and add oil, sauté the garlic and red onions. Add in the pork and mix well. Add the sliced tomatoes, and mix in fish sauce. Season with black pepper and pour in the pork broth. Cover and this simmer for 30 minutes
  • After boiling add the radish, green sili, okra, eggplant, and string beans. Mix well. Cover and let this simmer for 5 minutes.
  • Add the Knorr Sinigang sa Sampalok and mix well. Add the spinach and cover for 3-5 minutes or till the spinach has cooked. Mix and cover for another 2 minutes.
  • Serve hot.

Paano lutuin

  1. Sa palayok na may katamtamang init, ibuhos ang tubig at ilagay ang baboy. Takpan at pakuluin ng 45 na minuto o hanggang malambot ang baboy. Ihiwalay ang baboy at sabaw at itabi,
  2. Sa parehong palayok lagyan ng mantika at lutuin ang bawang at pulang sibuyas. Isama ang baboy at haluan ng mabuti. Ilagay ang hiniwang kamatis at fish sauce. wisikan ng paminta at ibuhos ang sabaw ng baboy. Takpan at pakuluin ng 30 na minuto.
  3. Pagkatapos pakuluin ihalo ang labanos, sili, okra, talong, at sitaw. Haluin ng mabuti. Takpan at pakuluin ng 5 na minuto.
  4. Ihalo ang Knorr Sinigang sa Sampalok. Ilagay ang kang kong at takpan ng 3-5 minuto o hanggang malulto ito. Haluin ng isang beses at takpan muli ng 2 minuto.
  5. Ihanda ng mainit.
