A short History of what chickens are to the Philippines

Meat was seen as a ritualistic custom by Filipino ancestors, the ‘anito’ or ancestor spirits or nature spirits were revered and prayed to, to ask for fishing and agricultural abundance. The common practice was to sacrifice food to the anito, harvests like bananas, yams, millets, tubers, or games like chickens, pings, and other meats. The Ilongos offered fowls like chickens as part of the ‘lampong’ or of guardian of wild animals. While the Maranaws ate chicken while they raid some for ritual offerings.

Birds have been domesticated since around 4000 years ago, there were only 4 known species of wild fowl bred over time. The ‘Gallus Gallus” or red jungle fowls became the first domesticated chicken, centuries of crossbreeding different breeds of birds which then split into the 350 breeds we now recognize. In the Philippines, where the red jungle fowl still thrives, an estimated amount of 44% of native chickens or around 184.88 million chickens in 2019 were accounted for. Chickens nowadays are not only seen at cockfights, ceremonies, or a source of food, these have now incorporated themselves to food culture where most of the fast food restaurants serve chicken especially fried chicken as their main dish or can be found in any menus. You’ll be hard pressed to find a person who has never incorporated chicken into their diet, from soups, sandwich’s, salads, as part of a flavoring of noodles, chips, or broths to a healthy diet or eat chicken for protein which helps build up muscle.

No need for pizza stones or cast iron pans, use your trusty non stick pan and a little bit of patience for this no oven chicken pizza recipe. Try this recipe for pizza nights or a quick fix for cheesy chicken cravings!

 The dough is a mix of flour, milk powder, garlic powder, salt, sugar, yeast and oil. You can also use olive oil to give it extra flavor. Slowly adding water to form a shaggy dough, kneaded till this is a bit smooth and bouncy. What’s great with pizza dough is that you can keep these over night in the fridge and take them out on days when you’re ready for movie night. Just add sauce made of a combination of tomato sauce, oregano, garlic powder, with any toppings like olives and jalapenos and a lot of cheese. A simple but delightful take on the pizza and chicken combo

Ingredients

  • dough
  • 3 cups all purpose flour (plus more for dusting)

  • 3 tablespoons milk powder

  • 1 tablespoon garlic powder

  • 1/2 teaspoon salt

  • 1 teaspoon sugar

  • 1 teaspoon yeast

  • 2 tablespoons oil

  • 1 cup warm water

  • chicken
  • 1 & 1/2 cup chicken fillet (chopped)

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 tablespoon garlic powder

  • 1/2 teaspoon paprika

  • 1 tablespoon oil

  • toppings
  • 1 cup tomato sauce

  • Sprinkle of oregano & garlic powder (optional)

  • Mozzarella cheese (any choice of cheese)

  • 1/3 cup onion

  • 1/4 cup olive

  • 1/3 cup jalapeño

Directions

  • For the chicken; in a bowl, mix together the chicken fillets, salt, pepper, garlic powder, and paprika. Prepare a pan at medium heat, add oil and sauté the chicken till this changes in color and is a light shade of brown. Set aside.
  • For the dough; mix together all purpose flour, milk powder, garlic powder, salt, sugar, yeast. Mix well, add oil and add 1 cup of water little by little, mixing this using your hand till this forms a shaggy dough.
  • Place this on a smooth surface, and knead, adding more flour as kneader till it looks almost smooth and this bounces back when pressed. Place this in a oil greased bowl and cover for 2 to 3 hours or till it doubles in size.
  • Place this back to the surface and knead to release air. Cut this in half or 4 parts to make a thinner base, which makes it easier to ‘bake’. Roll this into a thin circle.
  • Oil a non stick pan and place the rolled dough inside. Pour 1/3 to ½ cup of tomato sauce, sprinkle oregano, garlic powder, top with any choice of cheese, the cooked chicken, onion, olives, and jalapeño, or any topping you’d like.
  • Cover and place in a stove at medium high heat for 5 to 7 minutes or till the bottom of the dough browns or almost looks burnt.
  • Slice and serve!

Notes

  • You can leave the dough over night in the fridge, prepare it with toppings and bake tomorrow. Just make sure to let it at room temperature for a few minutes before using to easily handle the dough.
  • Make sure your meat toppings are pre-cooked before placing it on the pizza.
  • To fully check if the chicken is done. Poke this and see if the liquid comes out clear. If its still red or pink, sauté for a few more minutes.

Paano Lutuin:

  1. Para sa manok; sa isang tasa haluin ang manok, asin, paminta, garlic powder, at paprika. Maghanda ng kawali sa kalan na may katamtamang init, lagyan ng mantika at lutuin ang manok hangang magiba ng kulay. Itabi.
  2. Para sa masa; haluin ang harina, milk powder, garlic powder, asin, asukal, lebadura. Haluin ng mabuti at lagyan ng mantika at 1 tasa ng tubig pakontikonti, haluin hangang makabuo ng mabuhaghag na masa.
  3. Ilugar sa makinis na ibabaw at imasa, lagyan ng harina kung kinakailangn, imasa hangang makinis ito at bumabalik sa porma pag pinindut. Ilagay sa malaing mangkok na grinasa ng mantika, takpan ng 2 o 3 oras o hangang magdoble ng laki.
  4. Ibalik ito sa sa makinis na ibabaw at imasa ng konti para matangal ang hangin. Hatiin ng 4 na parte para makagawa ng manipis na base, irolyo hanggang makabuo ng manipis na bilog.
  5. Lagyan ng manitka ang non stick na kawali,ilagay ang ginulong na masa dito. Ilagya ng 1/3 o ½ tasa ng tomato sauce, wisikan ng oregano, garlic powder, at keso, lagyan ng linutong manok, sibuyas, olives at jalapeño, kahit anong sahog na gusto mo.
  6. Takpan at ilugar sa kalan na may katamtamang init ng 5 o 7 na minute o hangang ang ibaba ng masa ay magkulay kayumanggi.
